I got a reminder from Krissa a while back about the tofu pudding tutorial I mentioned a few weeks, ok maybe months, ago. Well, here it is! The main thing I use tofu for is blending it into things. It gives puddings and smoothies and really good thick texture. It doesn’t have a ton of taste so it kind of takes on the flavors of things it is mixed with. Today I am going to teach you how to make tofu pudding.
The flavor for today is Chocolate Banana Pudding. Be creative with mix in’s here and create whatever flavor you feel like! Warning: I tried chocolate strawberry and it tasted like barf. So don’t be creative and create that one. You won’t like it, I promise.Â
Start by blending a whole banana and one 3 oz serving of firm tofu. I started the blending in my Blendtec but I wasn’t making a big enough serving for it to mix well so I transferred it to my Magic Bullet. If you don’t have a Magic Bullet that blends single servings in small cups you may have to make a few pudding servings at once for your blender to blend this well.Â

Once this is mixed well add your flavorings. I added 1 T. cocoa and some stevia and mixed well again.

Of course, it needs some toppings. I added peanut butter and a few chocolate chips.

I’ve been reading a lot about people eating baked tofu. I am not vegetarian and I don’t love wierd/different types of typical vegetarian fare but I wanted to try this. I’ve put tofu in smoothies before and it is actually really really good. It is totally tasteless and it gives your shake an extra protein boost and an amazing texture! I have to admit I was pretty nervous to actually try this. I got the recipe from Caitlin at Healthy Tipping Point. Her blog is a really good one! Visit this post for the recipe and more pictures.


The verdict: It was … interesting. It had a very different texture. I definately liked it enough to try it again. It made a great light lunch paired with some fruit and a side salad. I can see this one really growing on me. I’m excited to do more experimenting!

Today is going great so far! I’m still in my lounging clothes though and it’s nearly 2pm! I took the kids and Caleb’s best friend and we flyered a neighborhood for about an hour for my next boot camp. Then I experiemented in the kitchen for a while before hitting the computer! Tonight it is our turn to babysit for the babysitting group. Here is the agenda we have set up. Let me know what you think:
6-6:30 – Destroy Draw in the driveway with sidewalk chalk while everyone arrives
6:30 – Dinner of bbq’d hot dogs for the kids
7:00 – Backyard games (relay’s, obstacle courses, etc)
8:00- Watch Bolt
9:30 – Storytime where each kid picks a book and I read to them like playing school
I realize not all the kids will jive with this schedule, but I think if we have things planned it will go much smoother than if it was a four hour free for all.
I hope you all have a great weekend! I have an almost 7 mile run on the agenda for tomorrow. This is the longest I’ve ever ran in my entire life!!! Wish me luck!
