Hot Avocado and Swiss Sandwich

Hey guys!  Here’s a sneak peak at my lunch today and then part of the big news is at the bottom of this post!

Here are the three simple ingredients to my Hot Avocado and Swiss Sami:

It’s very easy really.  Just take two wedges of low fat Laughing Cow Swiss Cheese and spread one on each side of a Sandwich Thin (you can use bread but Sandwich thins are WAY better!  They’re made by Orrowheat and can be found by the bread or buns at the grocery store.)  Then slice some avocado and make a sandwich out of it!

You can then eat as is but I like it warm.  So I throw it on the George (indoor grill or panini maker).  It melts the cheese a little and makes it so oooey gooey.

Look at all that goodness gushing out the sides!  Yum, yum!

So you may be thinking, cheese AND avocado?  That’s a lot of fat.  Remember FAT does not make us fat.  TOO MUCH FOOD makes us fat!  Healthy fats like the ones found in avocado are oh so very good for you.  They do wonderful things like increase hormone function, help skin, hair and nails, make you feel full and satisfied longer, increase your metabolism, decrease bad cholesterol and increase good cholesterol and so many more things.

So go eat up this Avocado and Swiss Sami and get in your healthy fats!

Ok, so here is some of the news.  If you are long time readers you know that I have been trying to think of a name for my new website and also my business.  I was thinking of using my name in it but I don’t think it sounds as professional.  I decided to go with (drum roll please…)

Lean Bodies Health and Fitness!

And the website is www.leanbodieshf.com.  Feel free to go check it out!  It is still a little baby and much work needs to be done on it so don’t judge me yet.  This blog will continue probobly until the end of the year and then it will be rolled over to that site.  Don’t worry.  I’ll never leave you completely.

Go look at my website and let me know what you think!  Have a great weekend!

Pizza Sandwich

I have heard all about Sandwich Thins but my grocery store has never carried them … UNTIL NOW!  Yay!  I love them!  I have put many different things between their layers and all have been fabulous.  There are only 100 calories in this yummy little bun.  You can use it in place of bread, english muffins, buns or anything!

The one I want to talk about today is a Pizza Sandwich.  I realize this picture isn’t the best but I didn’t really want to take my sandwich apart and I couldn’t get a better picture of the wonderful insides.

Anyway, all I did was spread some pizza sauce on each side of the bun.  I then put 2 T. cheese and sliced peppers and onions on one half and some turkey pepporoni on the other half.

Meanwhile I cooked 3 egg whites on the stove until they were done.  Slapped those in the middle of the sandwich and put the whole thing on the George!

And there you have a Pizza Sandwich!

Egg McMuffins

This is one of my family’s favorite meals.  Notice I say meals not breakfasts.  We have this any time of the day.  Whenever I don’t make dinner Brandon makes himself one of these.  Then the kids see it and they each want one.  It is very simple, very healthy and very satisfying.  Now, that’s my kind of meal!

  • Start by spraying a pan with non stick spray and “frying” an egg.

  • Meanwhile, toast a whole wheat english muffin.

  • After you flip your egg, top with a tablespoon of cheese.

  • After the cheese melts a little bit top with a slice of ham or canadian bacon.  Flip the egg so the ham is down.

  • Once the cheese is melted and egg is done, put on the english muffin and enjoy!  (Brandon butters his english muffin…  I don’t. :)   )

Life around here is crazy as you can probobly tell due to the lack of updates.  I have something kind of cool I am trying out starting on Friday.  I will give you guys all the details then.  Until then we have swimming lessons and final assessments for boot camp taking place this week!  Life is busy, busy, busy as always!

Don’t forget to enter my YouBar giveaway!  It ends on Friday an noon, MST!

Ham and Swiss Egg Sandwich

I was full from lunch for a while but I still started feeling snacky around 3pm.  I pulled out one of my handy dandy little trail mix baggies.  That hit the spot because I ate it nice and slow, taking it one piece at a time.

The afternoon was spent doing laundry and doing lots of computer work that needed to be done.  As I was making dinner I snacked on the leftover broccolli salad from yesterday.  Man that stuff is so stinkin good!

For dinner tonight we had Ham and Swiss Egg Sandwiches.  I just put ham and swiss cheese on a fried egg and plopped that on an english muffin.  I have a tutorial for making an English Muffin Sandwich that I will post tomorrow.  They are quite possibly the yummiest, quickest anytime meal there is.  My husband has one pretty much every night that I don’t make dinner.

I completed the meal with a salad.  It’s a random combo, I know.  But it tasted great.  The salad was very fresh tasting. I topped it with my homemade tomatillo dressing.  I will get that on here soon, too.

I got a couple new clients at work tonight and they were great!  I’m excited about it!  Now I’m off to watch the Biggest Loser Finale!  Who’s it gonna be?!?!  I’m excited to find out!

Malibu Chicken Sandwiches

We got the canopy all sent up this afternoon.  One of the rods was bent though so we ended up exchanging it tonight.  It’s not the classiest thing but it will be good to take to the pool and use in the backyard when we have picnics or bbq.  The kids loved playing underneath it.  The took their pillows and blankets out there and played all afternoon.

For dinner we had Malibu Chicken Sandwiches.  I seasoned chicken breast with some basic chicken rub and then grilled it.  At the end of grilling we layered a piece of ham and some low fat swiss cheese on the chicken.  Then we put that on the whole wheat bun with lettuce, low fat mayo and mustard.

I served it with a side of broccoli salad.  I knew I would be the one to eat most of this so I didn’t add bacon or anything else that is usually on this kind of salad.  Just onions, broccoli and sauce!  The sauce was:

  • 1/2 cup low fat mayo
  • 1 T. splenda
  • 1 1/2 T. vinegar

For dessert I had a dark chocolate fudgecicle!  I had never tried these before and it was great!  Such goodness for only 60 calories!

I have some preparations to do for camp tomorrow and then we’re going to watch 24!  Have a great night everyone!
