I think I’ve posted a variation of this before but this is the best version by far!

½ c. cottage cheese
¼ c. greek yogurt (or regular plain yogurt)
1 T. low fat cream cheese
1/3 c pumpkin
1 T. cocoa
1 T. sugar free fat free cheesecake pudding mix
Stevia
Blend together and top with 15 chocolate chips!

These pancakes are so good and they are a very common Sunday breakfast at our house in the winter.Â

2 c. whole wheat flour
3 T. brown sugar
2 t. baking powder
1 t. baking soda
1 t. ground allspice
1 t. cinnamon
½ t. ground ginger
½ t. salt
1 ½ c. milk
1 c. pumpkin puree (canned pumpkin)
1 egg
2 T. vegetable oil
1 T. vinegar
- In separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in another bowl. Stir powder mixture into pumpkin mixture just enough to combine.                                           Â
- Heat a lightly greased griddle or frying pan over medium heat. Pour desired amount of pancake batter onto griddle and brown both sides. I always press about 7 chocolate chips into the pancake after I’ve poured it on the griddle.  Serve hot with natural syrup or some peanut butter.
These cook up SO full and fluffy! Almost like a big cookie! You’ll love them!

This was a really good bowl of oats that used up some of the pumpkin puree I had in the fridge. I started with the Loaded Oatmeal Base but I replaced the banana with 1/4 cup pumpkin.Â
Stir in’s:
- Cinnamon
- Truvia (or other sweetener)
- 1 T. vanilla sf ff pudding mix
- 1/2 scoop vanilla protein powder
Toppings:
- 15 chocolate chips
- 1/4 cup fiber one cereal (this is the pie crust
 )
- 1 T. peanut butter
This yummy bowl had me wanting to lick it after it was all gone. This mix had 375 calories with the brands of ingredients that I used.

Hello bloggy friends! I don’t have long to post because I have other things I’m trying to get done. Sorry for the lack of updates lately. I will try to get on here and update you all later. If you’re lucky I’ll post a video of my daughter’s dance recital! Oh… Wait for it… What movie is that from? Here’s another clue: “Wait for it… Aliens.” Ok, it’s from Bolt. I love that movie. Talk about hilarious pigeons. “Whole wheat is not the same as whole grain!”

I have been really wanting a chocolate baked good lately. And I have some pumpkin that needs to be used up. I took a pumpkin muffin recipe and completely changed it to include the things I wanted to add until it had no relation to the original recipe.
 If you don’t have the wheat germ, flax or bran you could leave it out, just decrease the water a teeny bit. Also, if you don’t have pumpkin, just use more applesauce or banana. I’m sure they’ll still be fine.
Here’s the ingredients:
- 1/2 cup applesauce
- 1/2 cup Splenda
- 1/4 cup honey
- 2 egg beaters
- 3/4 cup water
- 1/2 banana, mashed
- 1/4 cup pumpkin puree
- 1/2 cup whole wheat flour
- 1/2 cup (1 1/2 scoops) vanilla or chocolate protein powder (I used vanilla because my chocolate doesn’t bake well)
- 1/4 cup wheat bran
- 1/4 cup wheat germ
- 1/4 cup flax seed
- 1/4 cup cocoa
- 1/2 t. salt
- 1 t. baking soda
- 1 t. cinnamon
- 1/2 cup chocolate chips
Mix the first 7 ingredients in a medium sized bowl. Mix the rest of the ingredients (except the chocolate chips) in another bowl. Mix the two mixtures together and stir in the chocolate chips. Pour into greased muffin pan. Bake at 350 degrees for 15-20 min.Â
This recipe made 11 muffins for me. I probobly could have stretched it and gotten an even dozen but oh well. With 11 muffins, they had 150 cals each and 6 1/2 g protein. They are great warmed in the microwave with 1 T. peanut butter spread on them!
In my world today:
Brandon’s home from TX! He’s off to work though so he doesn’t get to hang around and play with us. We don’t have anything planned today and it’s still cold outside. It’s looking like the kids will be playing with neighbor friends today while I clean, organize and work on material for my boot camp. I love days like this, when I have nothing planned so I can get tons of stuff done! I also have three fitness consultations tonight at the gym. Hopefully I rock their socks off!
