
½ c. cottage cheese
¼ c. plain greek yogurt (or regular plain yogurt)
1 T. low fat cream cheese
1-2 T. sugar free/fat free butterscotch pudding mix
½ T. peanut butter
¼ t. xanthum gum (optional, but it makes it really thick – can be found in the baking aisle – pretty expensive – $10 bucks-ish – but it will last forever and you can add to smoothies too to make them extra thick!)
Truvia packet
Mix the above in a magic bullet or blender and enjoy the thick, fluffy creaminess of Protein Mousse! (Stay tuned for more flavors! I see a new line of Protein Mousse coming …)

I think I’ve posted a variation of this before but this is the best version by far!

½ c. cottage cheese
¼ c. greek yogurt (or regular plain yogurt)

1/3 c pumpkin
1 T. cocoa
1 T. sugar free fat free cheesecake pudding mix
Stevia
Blend together and top with 15 chocolate chips!

If you need to take a dessert to a get together and you don’t want it to be TOO bad for you, why not just add some yummies to some chocolate pudding?!
I made two boxes of sugar free, fat free chocolate pudding according to package directions. Then I stirred in about 1 cup of fat free cool whip, 1/2 cup chocolate chips and a whole bunch of chopped strawberries.
This dessert was such a hit! Next time you need a “light a fluffy” dessert, try this one!

I have received a few comments asking about Stevia. Stevia is an all natural, calorie free sweetener. It is similar to Equal, Splenda, etc, but it is natural and from the leaves of the Stevia plant. It has neglegible effects on blood sugar levels and there isn’t the wonder (or certainty, in some people’s cases) about whether or not is bad for you, causes cancer, what have you.Â
You can purchase this in liquid, dropper like form at any health food store but I prefer to buy the brand Truvia. It comes granulated and in packets and best of all, they carry it Walmart (in addition to health food stores). The taste is great and it is very inexpensive and convenient. I love me some Truvia!Â

This is not a loaded oatmeal recipe, meaning there is not banana or milk in the base. I just made regular old oatmeal with water in the micro. But it still tasted great!

1/3 cup old fashion oats cooked in the microwave with 2/3 cup water

While it’s warm stir in ¾ scoop vanilla protein powder, 2 T. lemon sugar free fat free Jello Pudding mix, and 1 small spoonful of poppy seeds.
 

There you have it! Lemon Poppy Seed Muffin Oatmeal!Â

I got a little creative here. I had some strawberries that were about to be too soft so I was trying to think of something I could do with mashed strawberries. I started by mashing up some strawberries and some frozen raspberries. I wanted something to stir into it so I made a little lemon custard by blending this together:
- 3/4 scoop vanilla protein powder
- 1/4 cup milk
- 1 T. lemon sf ff pudding powder
It was a very thick little mixture. I plopped in on top and started by eating bites off the custard with the berries. I ended up mixing it all in after a while though. This would be really good with some sort of cheesecake-y like custard too! Oh, maybe I’ll try that this week! I’ll let you know how it goes!

I got this recipe from a Dole ad out of a magazine. It was so fabulous. I made it for dessert at a family get together this last weekend because I wanted something light. It was a big hit!Â
- Make an angel food cake according to pkg directions.
- For the pudding, mix 1 (20 oz) can crushed pineapple, undrained, with 1 (4 serving) dry pkg of sf ff vanilla pudding mix. Then stir in 1 cup cool whip.Â
- Slice strawberries.
Arrange sliced cake, then pudding and then berries on a plate and enjoy!

This morning at my boot camp I hurt my quad. I think I pulled it. I’m so bugged. I started off into a sprint and something pulled and I couldn’t put much weight on it after that. I’ve been icing it off and on all day. I am skipping my run tomorrow and trying to take it easy. I’m really hoping it feels better by Thursday. Or at least Friday. Today has been crazy with running errands and driving here and there. It’s nice to actually sit down for a second.Â
Anyway, I am off to get some things done around the house! I hope you all have a great day!

This shake was so thick and yummy. Adding the frozen bananas and ice made it start growing and growing in the blender. This is a great one if you want to feel full for a long time and want the volume for about 220 calories!
- 1/4 cup milk
- 1/4 cup egg beaters
- 1 T. banana cream sf ff pudding mix
- 1/2Â scoop vanilla protein powder
- 1/3 frozen banana
- 2 T. cottage cheese
- 1/2 T lf cream cheese
- ice
Tastes just like a piece of pie!
In my world today:
We got a rat today. I’ll be the first to admit that I was hesitant. I mean, look at their tails! Creepy! But Caleb wanted a pet and I’ve heard about how good rats are as pets and how smart they are. We headed to the pet store today and looked at them. The one we got is actually so cute! He gives little kisses. I guess you can teach a rat his name and teach him tricks and stuff. I think it will be a lot of fun. But, we’ll see.
I also got some new shorts today at Buckle. They’re way cute.Â
That’s about it so far for today. Oh, we are contemplating getting a Blendtec Blender. It’s just like a vitamix. Do any of you have one of these? A blendtec or a vitamix? Does the novelty wear off or do you still love it as much as you did the first day?

This was a really good variation of traditional oats. I loved this and will definately have it again, maybe even tomorrow.
Let me talk about each layer:
- First layer is oatmeal. Not loaded oats, just traditional oatmeal. I did 1/4 cup oats with 1/2 cup water nuked for a minute and a half. Then I stired in 1/2 scoop vanilla protein powder and 1 T. sf ff vanilla pudding mix.Â
- Second layer is yogurt and cottage cheese. I took half of a container of Weight Watchers raspberry yogurt and blended it with 1/4 cup cottage cheese until smooth. Many blenders won’t blend this because there isn’t any liquid. I use my magic bullet. If your blended won’t mix this, you can either add a teensy bit of milk or just stir it together.Â
- Third layer is sliced strawberries. I sliced up about 7 strawberries.
- Last layer is 1/4 cup Fiber 1 cereal and 1 T. slivered almonds.
To assemble layer half the oats, half the yogurt/cottage cheese, half the berries and then half the cereal and almonds. Then repeat the layers with the remaining ingredients.Â


There you have it! An Oatmeal and Yogurt Parfait! What do you think? (This has 375 calories. Feel free to adjust the amounts to fit your calorie needs.)
In my world today:
I am so sore from my new workout program! I’m loving it. I got up and got the workout in. I just did 45 min of lifting and I’m going for a run later tonight. I ran some errands, did some cleaning, you know, the usual. Nothing too crazy around here, but that’s how I like it. I hope you’re all having a wonderful day!

I had a fantastic bowl of oats this morning. And it didn’t even include chocolate. Isn’t that amazing? I actually loved something that didn’t include chocolate! It definately had peanut butter though.
 Here’s a picture of my little creation:

Start with the loaded oatmeal base: (which again I got the idea from Kath)
- 1/4 cup oats
- 1/4 cup water
- 1/4 cup milk
- 1/3 banana
- splash vanilla
All cooked over medium on the stove, whisking while cooking to mash the banana.
Stir in’s:
- 1/2 scoop vanilla protein powder
- 1-2 T. banana sf ff pudding mix
Toppings:
- another 1/3 banana, cut up
- 1 T. walnuts (well, i used pecans becuase that’s what I had)
- 1 T. natural peanut butter
This was so heavenly! A great breakfast for a morning late in March when it is snowing outside!

In honor of the first day of Spring I had a Citrus Sunrise Shake after my workout. It was really good. Very springy. Could definately be summery, too. Here’s what I put in it:
- 3/4 cup Orange Juice (only 100% juices around here, of course)
- 1 scoop vanilla protein powder
- 1 T lemon sugar free, fat free jello pudding mix (why am I so obssessed with these? They make things so creamy, thick and yummy!)
This was way good. Definately something you could sip on while sitting in the backyard in the sunshine. Hey! These would be great poured into homemade popsicle molds for kids! Or moms, for that matter!
Just a little fyi, for you here. After your workouts you want to have a shake with some protein (protein powder) and a fast acting carb. In layman’s terms, the carb is what takes the protein to your muscles to help with recovery. You want a simple carb because it will take it there faster.  Fruit or juice is great for this purpose. That is a very simple explanation of a not so simple process. If you like your protein powder with water, have a piece of fruit with it. This will probobly not fill you up for very long because it will get used by your body really quickly!
In my world today:
Today was another beautiful day! I think the high is 70 for today! I got up early and went to the gym and did an hour of circuit training (my fave way to work out these days). I’ll go for a short run this evening after Brandon gets home from work. I took the kids to the library, too. I love doing this on Fridays because then they get these great books and read them all weekend! We have a crazy busy day tomorrow but I’ll get on here and post my first “Weekend Workout Tip”! Hope you are all enjoying the first day of Spring!
