Apple Cinnamon Eggs

This is one of my faves lately.  To make the eggs, start by dicing half an apple and “frying” it in a 1/8 t. coconut oil.  Meanwhile, whisk together 3 egg whites and 1 t. sugar free cider mix (in a single serving pixie like crystal light), cinnamon and stevia.  Add to the apples and scramble the egg mixture.

This is your egg base.  From here you can do one of two things.  Add those eggs to a sandwich thin (pictured above) with 1/2 T. natural maple syrup and grill on a panini press or George Foreman until toasty.  This is a GREAT sandwich!  Or, if you don’t want the carbs, simply top your eggs with a drizzled tablespoon of peanut butter.  Both ways are incredibly delicious!

Maple Nut Fudge

100_1480Today I was in the mood for just a big ol’ blob of peanut butter.  I wanted to add some stuff to it though to make it even more nutritious.  Here’s what I stirred together:

  • 2 T. peanut butter
  • 1/4 sc. vanilla protiein powder
  • 1/2 T. real maple syrup
  • 1 t. flax seed

And that’s it!  Not only did it taste decadent, the combo of fat, protein and fiber kept me full for hours!  You’ve got to try this one! 

(300 cals – so make sure you’re counting this as a meal/snack)

My Homemade “Candy Bar”

These little suckers, my friends taste just as good as a candy bar!  For those of us healthy eaters they may even taste better!  I think they do!  I’ve even got my husband eating these for a post dinner treat.  THAT means they’re really good!

Just take a date (get the “Fancy Medjool Dates” from Costco, they make this treat SO. MUCH. BETTER) and slice open down the middle.  Remove the pit.  Spread 1/2 T. almond butter (or peanut butter) down the middle.  Line 4-5 chocolate chips down the center and put the date back together.  Savor this treat with small bites!  You will love it!  You could even put these together and bring them with you as a portable snack!

PB Banana Spread

I feel like I am reposting all of Katie’s ideas from Chocolate Covered Katie but they’re great!  Here’s another must-do for you all:

Peanut Butter Banana Spread.  There.  I said it.  This is So. Good.  I did it a little different than Katie and I added some Agave Nectar.  Wowzers.  This is yummy.

Start by throwing a banana, 1 T. peanut butter and 1 T. agave nectar (or honey) into the blender or magic bullet.  (Here’s a picture of the magic bullet for those of you who don’t know what it is.  It is a small blender that you pulse and has cups that you screw the blade onto.  It’s great for small amounts of things and things that don’t blend easily.  When it gets caught you just take it off and shake the ingredients back down into the blades.)

You are left with this creamy spread (only 45 calories a tablespoon) for toast, oatmeal, yogurt, ice cream, or just about anything!P1020498

Dessert Wrap

This wrap had so much sweetness and I loved it!  I also brought it with me to a museum with the kids so the chocolate chips were soft and it was so good!

I used a Flat Out wrap and spread 2 T. of peanut butter down the middle.  I sliced 1/2 a banana down the middle and sprinkled with about 10 chocolate chips and 1/2 T. agave nectar (you can use honey).

So I started p90x yesterday.  I love it!  Have any of you guys done it?  I did the Chest and Back video yesterday and I am so sore today!  It feels so good.  This morning I did the plyo video.  I was really scared about this one.  I was worried it would be so hard I wouldn’t be able to get through it or would have to stop a lot.  It was totally doable, for me at least.  I didn’t have to stop at all but it kept my heart rate really high.  I loved it! 

One thing I love about it, is that it keeps me from getting bored.  There is a count down on the screen for he entire workout and also for each segment.  It is set up in circuits of four exercises that you repeat after you complete each circuit once.  The whole set up is great for exercise ADD people like me.

 I’ll keep you guys posted on what I think of it as time goes on.

Banana Soft Serve

If you frequent the food blog world you have seen banana soft serve floating around.  It is very easy, very refreshing and very sweet.  It is very easy too!  All you do is slightly thaw two frozen bananas and blend them up!  I used the magic bullet so it was in a smaller cup.  It might be hard to blend at first but just keep on going and soon you will have a very thick banana soft serve! 

And what concoction would be complete without some toppings?  I did peanut butter, coconut and chocoalte chips. 

This is a great and refreshing treat for a summer afternoon!

Double Chocolate Fudge

Ok, so I’m on a dessert kick lately!  Sorry that this recipe is so similar to yesterdays.  I just had to post it anyway. 

I made this recipe the other day and cut it into 9 squares.  I keep them in the freezer and I have one square every night after dinner!  It’s a great way to end the day on a sweet note without filling my body with yucky things!

1 square of dark/bittersweet chocolate (off of a baking bar – 70 cals worth)
1 1/2 T. coconut oil
1 T. fat free cream cheese
2 T. natural peanut butter
1/2 scoop chocolate protein powder
1 1/2 T. cocoa
Stevia to taste

Melt the dark chocolate in the microwave.  Add the oil, cream cheese and peanut butter and soften so you can easily stir them together.  Add the protein powder, cocoa and stevia.  Mix well.

Form a square on a piece of wax paper.  Freeze for about 20-30 minutes.  Cut into 9 squares.  Enjoy!  (Store in the freezer)

Dirt Balls

I got an email from Maureen Jeanson the other day, the author of “Squeaky Gourmet” asking if I would review her new cook book!  It is a great book that focuses on clean eating.  All of her ingredients are good, clean wholesome foods.  I haven’t found a single processed ingredient in her book yet!

Her book is very informative.  It starts with an intro that talks about carbs, protein and fat and discusses each of those and what they do in our bodies.  She talks about the benefits of eating clean, whole foods and also has tips on efficient cooking.  That is the first 17 pages.  The rest of the book is filled with over 100 great recipes.  Her sections are:

The recipe I have chosen to share with you guys today has three of my favorite ingredients in it:  chocolate, honey and peanut butter!  (I know I just finished saying that all the ingredients are good and wholesome…  but it’s dark chocolate!  That counts as wholesome to me!)

DIRT BALLS (Love the name!)

1/4 cup toasted old fashioned oats
2 T. dry roasted sunglower seeds, chopped (I didn’t have these)
1/2 cup natural peanut butter
2 T. unsweetened cocoa
1/4 c chopped bittersweet chocolate
1 t. vanilla
3 T. honey
2 T. roasted almonds, chopped fine

Toast oats in a skillet on medium heat for 20 minutes (10 minutes was plenty for mine).  In the meantime, combine the rest of the ingredients except for the almonds.  Mix really well with a fork.  When the oats are finished toasting, chop them a little in a food processer or blender.  Put into the mix and combine well. 

Put almonds into a bowl for rolling onto the balls.  (I rolled my balls in fresh, grated coconut instead of the almonds).

If your mix is too sticky to handle, set in the fridge for 30 minutes or so.  Make small balls about 3/4 of an inche across, roll in your hands and then roll in the almonds.  Voila!  Store in fridge in an airtight container. 

You can also add to the mixture or roll the balls in chopped dried cherries, puffed rice cereal, crushed bran flakes, coconut, cocoa powder or powdered sugar.

Each of my little truffles had 53 calories in it and my recipe made 30 balls.  I made these for my family and everyone loved them!!!

Apple Pie and Ice Cream Oatmeal

This oatmeal could possible ressemble apple pie and vanilla ice cream.  It is SO good! 

Cook 1/4 cup of oats with 1/2 cup water on the stove along with half an apple chopped into chunks.  Make sure this all cooks together so the apples are cooked.  After cooking stir in 1 T. flax seed, 1/2 scoop vanilla protein powder and cinnamon. 

Top the oatmeal with 1 Tablespoon of peanut butter over half and 1/4 cup plain oatmeal mixed with stevia on the other half. 

I’ve been having this oatmeal everyday this week and it is to die for!  All the flavors mix together wonderfully!

Homemade Chocolate Banana Protein Bar

Chocolate Banana Protein Bars

8 scoops chocolate protein powder
1 mashed banana
1 t. vanilla
1 c. oats
1 small package chocolate jelly pudding (sugar free)
1 c. milk 

  1. Mix all ingredients in a large bowl.  Pour into a greased 8×8 dish.  Freeze for 2-3 hours or until firm enough (but not too firm) to cut.
  2. Cut into 9 bars.  Individually wrap and freeze.

***Really good with 1 T. peanut butter spread on top before eating***

So I got my pictures done yesterday!  I will have them in about a week or two and I’ll get them up here.  I think they turned out great!  I’m really excited about it.  I am also really excited to get back to a more normal diet and eat a little more food. :-)   I have discovered this amazing bowl of oatmeal that is to. die. for.  I will feature it later this week.  Until then, have a great day!
