Chocolate Caramel Waffles (or pancakes)

This recipe can be used for waffles or pancakes.  It is so sweet and chocolatey!  It’s a perfect single serving recipe for that sweet tooth.

3 T. whole wheat flour
2 T. milk
1 T. egg beaters or one egg white
3 T. (42 g) plain greek yogurt
½ t. coconut oil  (I use Tropical Traditions)
Pinch of baking soda and baking powder
2 T. cottage cheese
1 T. chocolate protein powder
1 T. cocoa
Splash DaVinci’s Sugar Free Caramel Syrup
Stevia

Blend up the above ingredients and pour into pancakes or waffles.  Top with 1 T peanut butter (I love Krema peanut butter), 15 chocolate chips and 1 T. maple syrup.  (382 calories for full recipe plus all toppings listed)

Chocolate Chip Pumpkin Pancakes

These pancakes are so good and they are a very common Sunday breakfast at our house in the winter.

2 c. whole wheat flour
3 T. brown sugar
2 t. baking powder
1 t. baking soda
1 t. ground allspice
1 t. cinnamon
½ t. ground ginger
½ t. salt
1 ½ c. milk
1 c. pumpkin puree (canned pumpkin)
1 egg
2 T. vegetable oil
1 T. vinegar

  1. In separate bowl, mix together the milk, pumpkin, egg, oil and vinegar.  Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in another bowl.  Stir powder mixture into pumpkin mixture just enough to combine.                                            
  2. Heat a lightly greased griddle or frying pan over medium heat.  Pour desired amount of pancake batter onto griddle and brown both sides.  I always press about 7 chocolate chips into the pancake after I’ve poured it on the griddle.  Serve hot with natural syrup or some peanut butter.

These cook up SO full and fluffy!  Almost like a big cookie!  You’ll love them!

Whole Wheat Yogurt Pancakes

 

100_0474I got this recipe from Kath at www.katheats.com.  These were the fluffiest whole wheat pancakes I’ve had in a long time!  I made them for breakfast this last Sunday and the whole family loved them!  You want to know the best part?  I had a couple the next day and toasted them in the toaster and the still tasted great!  I had them how Kath does with a mashed banana and peanut butter spread on them.  They were divine and kept me full for quite a while!

  • 1 c whole wheat flour
  • 1/3 c milk
  • 1 egg
  • 1 c plain yogurt
  • 2 t sugar
  • 2 t oil
  • 1 t vanilla
  • 1/2 t baking powder
  • 1/4 t baking soda
  • 1/8 t salt

Mix the ingredients together and pour about 1/4 cup of batter for each pancake.  Cook on a griddle over medium heat.  I actually doubled the recipe and came out with 20 pancakes.  According to my calculations and ingredients one pancake had, are you ready for this, only 66 calories!  Wowzers, huh?!  I loved them and will definately be making them again.  Thanks Kath for all the great ideas!

Aubrey had to get casted for her helmet today.  :(   It was sad.  Luckily the process didn’t take long because she was definately not loving it.

It should come by the end of next week hopefully.  We should find out soon if insurance will cover it.  I hope it does because if not it will cost us a very pretty penny!
