Guacamole and Hummus Salad

I am known to eat the same thing over and over again when I find something I love.  My breakfast for the last, probobly, month has been this.  This yummy salad has been my favorite lunch as of late. 

I make a big salad with whatever veggies I have on hand.  Today it was romaine, peas and peppers.   I usually add more but I was low on the veggies today.  I also added a hard boiled egg for some extra protein.  For the dressing I top with 2 T. guacamole (I use Wholly Guacamole from Costco – minimal ingredients and I’m too lazy to make my own) and 2 T. hummus.  Then I toss the salad so the “dressings” are all mixed in.  This is such a great, healthy salad!  I love it!

Bbq Ranch Chicken Salad

Here’s an easy salad idea for you.  Grill up some chicken with any seasoning (I used “Kickin’ Chicken).  Throw that and your toppings on your salad.  I topped my salad with bell pepper, red onion and chicken.  For the dressing stir together equal amounts of bbq sauce and low fat ranch.  I used 3/4 T. of each.  This is such a yummy, different tasting salad!  Perfect for a light lunch!

Nutty Chicken Salad

Oh my gosh.  This salad is so good!  It has all the elements of a good, summery salad.  It’s got a light flavor, strawberries, swiss cheese, egg, bacon, and lots of other yumminess. 

Salad ingredients:

  • Romaine lettuce
  • Grilled Chicken
  • Red onion
  • Raspberries or strawberries
  • Swiss cheese, grated or thinly sliced
  • Bacon, cooked and crumbled
  • Pecans, chopped

Dressing Ingredients:

  • 1 t. oil
  • 2 t. white vinegar
  • 3/4 t. low fat mayo
  • 3/4 t. sf maple syrup
  • 3/4 t. brown sugar

The dressing has about 70 calories.  The calories in the salad depend on the amounts of the ingredients you put in.  This salad is a great flavor combination!  I hope you try it!

Well, the results of the “One Plate Challenge” are in.  And… I forgot my camera.  I’m so sorry.  I couldn’t go home to get it.  You’ll have to just trust me on this one. 

Here’s what I had:

  • A little bit (1/4 cup?) of a really good bean salad with avocado
  • The same amount of a yummy pasta salad
  • 1 1/2 chocolate chip cookies
  • 1 really good brownie with cool whip and strawberries
  • 1/2 of a yummy pudding-ish dessert with a graham cracker crust

I admit, its more that I planned but I could’ve eat much more so I was proud of myself.  I left feeling like I had had some good treats but not overly stuffed and I was happy about that, too.  I am also happy that the crazy week of a million bbq’s is over and I can go back to eating normally without all the temptations to indulge!  I like indulging every once in a while but this last week has been a bit ridiculous.

I will attempt the “One Plate Challenge” another time when I have my camera with me!

Today is a day to get a bunch of stuff done around the house.  I have all sorts of laundry, kitchen cleaning, spring cleaning/getting things sorted for the garage sale, and other things to do.  The kids slept in until 9am, which is completely crazy for my kids, and were outside playing with neighbors by 9:30am.  I love summer!  Now, if it would just get a little bit warmer so we can start hitting the pool I’ll be good to go!

Strawberry Syrup and Tomatillo Dressing Recipes

I am afraid my eats today will completely bore you as they are very much the same as yesterday and the day before.  I had to have an early lunch so that I could make it to work by noon.  I had my tried and true Whole Wheat Yogurt Pancakes.  This time I put the peanut butter directly on the pancake instead of drizzling it over the top.  I think I like that better because then every bite had some peanut butter.  Yum.

I took my kids to Saundra’s while I went to work.  I thought Aubrey would be fine because she’s such a good baby but apparently the fact that she was not in her normal surroundings got the best of her.  She cried most of the time I was gone.  I felt bad for her but I also felt bad for Saundra.  It’s never fun having to comfort a sad kid that isn’t your own…

After I got home from work we watered the flowers and played in the backyard for just a little bit.  I was feeling munchy (not sure if it was really hunger…) so I broke out this little treat:

A few of you have asked for my recipe for the Strawberry Syrup.  I got it from my Blendtec recipe book.

Here’s the recipe:

  • 2 cups strawberries
  • 1/2 cup sugar

That’s it.  Just blend that up in the blender.  On my Blendtec I push the soups button which means it blends for a long time and warms it up.  I would think any blender could do it but you may need to add some liquid to it in a regular blender.  I’m not sure.  I used Splenda instead of sugar for this.

I’ve also had some requests for the “Cafe Rio Tomatillo Dressing”.  This is the light version of the recipe so it’s a little waterier than the original but it only has 12 calories per tablespoon!  Seriously!  It’s so good!  The taste is just the same, it’s just a little thinner.

  • 3 fresh tomatillos cut into quarters
  • 1 pkg Ranch Buttermilk Dressing Mix
  • 1/2 cup low fat mayo
  • 1/2 cup fat free sour cream
  • 1/2 cup buttermilk (I used sour milk which is 1/2 T lemon juice in 1/2 cup milk – let sit for 5 min)
  • 1 cup fresh cilantro
  • 3 cloves garlic, crushed
  • 1/8 t. cayenne pepper
  • 2 T. lime juice

Throw all this in the blender and blend it up!  This makes a lot.  You can just keep it in your fridge and use it on your salads for a while!  It really makes you want to eat a salad, let me tell you!

Cobb Salad

This is such a good salad.  The dressing is so light and fresh tasting.  And the toppings and flavors go perfectly together!  It is a really great lunch or dinner for that matter!

Here are the toppings I put on:

  • 1 slice turkey bacon
  • 1/2 hard boiled egg
  • 1/2 T. bleu cheese
  • 2 oz chicken
  • 1 oz avocado

You can use as much of these above toppings as you’d like. 

Here’s the recipe for the yummy dressing:

  • 2 t olive oil
  • 1 t balsamic vinegar
  • little squirt of mustard
  • shake of pepper

  • made a boot camp cd (which as it turns out isn’t working so I guess this should still be on my to do list)

Caribbean Chicken Salad with homemade Honey Mustard Dressing

This salad was really good and pretty different from anything I’ve tried recently.  And I love honey mustard dressing and am excited to now know how to make it!  Here’s the salad combo:

  • Romaine lettuce
  • Mandarin Oranges
  • Pineapple (I used canned tidbits)
  • Avocado
  • Chicken (2 breasts, sliced in half so it’s thinner)

Mix the following together and rub on the chicken about an hour before you plan to grill it:

  • 1 T. lime juice
  • 1/2 t. garlic powder
  • 1/2 t. salt
  • 1/2 t. pepper
  • 1/2 t. Cajun seasoning (I didn’t have this so I used “Kickin’ Chicken”)

Here’s the ingredients for the homemade Honey Mustard.  This is for one serving so multiply as needed:

  • 1/2 T. honey
  • 1/2 T. Dijon Mustard
  • 1/2 T. lime juice
  • 1 T. lf mayo
  • Sprinkle of ground ginger
  • 1/2 t. oil

Top the salad with the grilled chicken (cut into chunks) and top that with the dressing!  You should use the dressing immediately.  I’m not sure why, but the recipe says to so you better do it.  You’ll love this I promise!

In my world today:

Wow, I feel so flustered because I have so much to do today!  This is first time I’ve sat down so far today.  I got up and went to the gym at 8am.  Came home and while Aubrey was napping I got my grocery list ready for the next week.  When she woke up, which wasn’t long after she went down, we rushed to the store.  The kids needed new shoes so we got those as well as our groceries.  I realized the other day that Brynley’s shoes she’s been wearing are two sizes too small!  Whoops!  When we got home from the grocery store I had to feed Aubrey and put her down again.  Today’s spring cleaning task was cleaning out the fridge (like really cleaning the shelves and everything) so I wanted to do that before I put all the new groceries in, so I started on that task.  Actually, I’m still in the middle of that task.  I just thought the fridge door should be shut for a while so I took a little break.  Meanwhile, the counters are covered in non-perishable groceries, there are dishes in the sink and dishes to be unloaded from the dishwasher.  Laundry is exploding out of my ears.  Library books are due today.  I have to make 100 copies of my boot camp flier before tomorrow. (breathe).  Wow.  I feel like I have so much to do I don’t know where to start.  So, maybe I’ll just stay here and keep writing about.  No.  I should go get to work.
