Easy to grab protein snack

Tip of the day to help you get your protein in:

Always have hard boiled eggs on hand!  They are portable, tasty and packed full of protein!  Smash it up “kid-style” with spray butter and salt or just peel it and eat with your hand.  What can get any easier than that, right?

Cheesy Rice and Eggs

Chop up whatever veggies you have in your fridge.  I had brocolli, onions and bell peppers.  Sautee them in 1/4 t. coconut oil.  Add in 1/3 c. of already cooked brown rice.  Then add 3 egg whites and scramble.  When the egg is almost cooked top with a couple tablespoons of cheese and let it sit while it melts.  This will make the underside nice a crispy!  Yum!

Chili Rellenos Casserole

I got this recipe from the Body for Life Cookbook.  That cookbook has some amazing recipes.  This one is high in protein and flavor but low in calories!  Check out the size of this serving:  (recipe makes four servings)

3 cans (4oz) whole green chilies, drained
4 oz reduced-fat Monterey jack cheese/string cheese
1 ¼ c. egg substitute (Egg Beaters)
½ c. flour
½ c. skim milk
½ c. reduced-fat cheddar cheese, shredded
1 t. chili powder
2 green onions, sliced
½ c. salsa

  1. Preheat oven to 350 degrees.
  2. Lightly goat an 11×7 baking dish with cooking spray
  3. Lay whole green chilies out on paper towels.  Slice Monterey jack cheese into the same number of pieces as there are chilies.  Insert a slice of cheese inside each chili and arrange evenly in baking dish.
  4. In a medium mixing bowl, whisk together egg substitute, flour and milk.  Pour egg mixture over chilies in baking dish.
  5. Layer shredded cheddar cheese on top of casserole, then sprinkle with chili powder and green onion.
  6. Bake for 35 min or until top is golden brown and toothpick inserted in center comes out clean. 
  7. Cut into 4 portions and top with salsa.  

Quiche in a Bowl

I threw this together the other night quite randomly and I LOVED it!!! 

I started by scrambling some eggs, one whole egg and two whites to be exact, with some veggies, brocolli, onion and zuchinni to be exact, again.  After this was all scrambled and cooked I threw it over 1/2 cup of cottage cheese and topped with 1/2 T. real maple syrup.  The syrup gave it a yummy breakfast sweetness.  Brandon topped his with salsa so whichever way you want to go with it will be fantastic!

Double Cheese Egg White Omlet

This is a great breakfast when you want something light.  I used 3 egg whites.  While the egg whites are cooking I add my veggies, usually peppers and onions.  When it is almost cooked through flip the omlet.  Spread 1 T. fat free or low fat cream cheese over half the omlet and top that with 3-4 T. fat free cheddar cheese.  Fold in half to melt the cheese and enjoy!

Guacamole Egg Wrap

I love this wrap!  I’ve never paired guacamole with eggs but it was really good!  For this wrap I used the Flat Out wraps.

These are really good and have low calories and lots of protein and fiber.  What a perfect combination! 

 I start the wrap by cooking an egg that has been whipped so the yolk is mixed in.  While that’s cooking I spread 2 T. of guacamole down the middle of the wrap.  Then I top with the egg, some veggies (today it was strips of bell pepper) and a slice of low fat swiss cheese.  I wrap it up like a burrito and cook it on the stove covered until the cheese has melted.  This is such a great wrap!  I hope you all try this one!

Week one of Core4 is over and I am down 2 1/2 pounds!  That is huge for me.  Whenever I try to lose weight it comes off about 1/2 pound at a time.  The funny thing too is that this product is said to target your trouble spots.  I was thinking, “Hm.  We will see about that.”  I lost 1/4 inch off each thigh and off my butt this week.  Hello trouble spots!  I am feeling really good taking the supplements.  I feel tight and fit and … just good.  I have good energy and all that kind of stuff.  I haven’t been  hungry all week long and my munching has really been kept to a minimum.  One complaint I do have though is that by the time evening comes I am feeling a little gassy… probobly from all the fiber I shake on my food!  I’m feeling really good though and excited to see what next week will bring!

Other news, I can still see!  At the Dr yesterday my right eye was seeing 20/20 and my left was at 20/25 just one day after surgery!  It should continue to improve for a while too!  I can’t even tell you how exciting it is to wake up in the morning and be able to see!  It is crazy.  My eyes are still pretty scratchy and sometimes my left one feels like I have an eyelash in it, which, as you all know, can be pretty painful!!!  But I can not complain one single bit!  I’m loving it!

Egg McMuffins

This is one of my family’s favorite meals.  Notice I say meals not breakfasts.  We have this any time of the day.  Whenever I don’t make dinner Brandon makes himself one of these.  Then the kids see it and they each want one.  It is very simple, very healthy and very satisfying.  Now, that’s my kind of meal!

  • Start by spraying a pan with non stick spray and “frying” an egg.

  • Meanwhile, toast a whole wheat english muffin.

  • After you flip your egg, top with a tablespoon of cheese.

  • After the cheese melts a little bit top with a slice of ham or canadian bacon.  Flip the egg so the ham is down.

  • Once the cheese is melted and egg is done, put on the english muffin and enjoy!  (Brandon butters his english muffin…  I don’t. :)   )

Life around here is crazy as you can probobly tell due to the lack of updates.  I have something kind of cool I am trying out starting on Friday.  I will give you guys all the details then.  Until then we have swimming lessons and final assessments for boot camp taking place this week!  Life is busy, busy, busy as always!

Ham and Swiss Egg Sandwich

I was full from lunch for a while but I still started feeling snacky around 3pm.  I pulled out one of my handy dandy little trail mix baggies.  That hit the spot because I ate it nice and slow, taking it one piece at a time.

The afternoon was spent doing laundry and doing lots of computer work that needed to be done.  As I was making dinner I snacked on the leftover broccolli salad from yesterday.  Man that stuff is so stinkin good!

For dinner tonight we had Ham and Swiss Egg Sandwiches.  I just put ham and swiss cheese on a fried egg and plopped that on an english muffin.  I have a tutorial for making an English Muffin Sandwich that I will post tomorrow.  They are quite possibly the yummiest, quickest anytime meal there is.  My husband has one pretty much every night that I don’t make dinner.

I completed the meal with a salad.  It’s a random combo, I know.  But it tasted great.  The salad was very fresh tasting. I topped it with my homemade tomatillo dressing.  I will get that on here soon, too.

I got a couple new clients at work tonight and they were great!  I’m excited about it!  Now I’m off to watch the Biggest Loser Finale!  Who’s it gonna be?!?!  I’m excited to find out!

Pizza for Breakfast?!

This morning I got up and wasn’t very  hungry due to my late dessert last night so I worked out on an empty stomach.  I did a workout that we’ll be doing for boot camp next week.  It was a good one!  I got in about 30 min lifting and 20 min of running sprints outside.  After the workout I was definately hungry!  I made a pizza omlet with a slice of homemade bread and a fruit smoothie.  It was so yummy!

The omlet consisted:

  • one egg
  • one egg white
  • a few slices turkey pepperoni
  • a little pizza sauce
  • onion
  • red bell pepper
  • 3 T fat free chedder cheese

The smoothie was great.  I basically just used up some fruit we have been needing to eat.  It had:

  • OJ
  • plain yogurt
  • pineapple
  • peaches
  • banana
  • coconut extract
  • ice

Since breakfast I’ve been going from room to room in the house and picking up.  This house seriously looked like tornado went through it!  I’m only about half way done and I’ve been going for 2 hours!  In just a little bit I’m going to cook up a bunch of whole wheat pancakes for this next week.  I may just have some for lunch, too!
