
Ok, so I’m on a dessert kick lately! Sorry that this recipe is so similar to yesterdays. I just had to post it anyway.
I made this recipe the other day and cut it into 9 squares. I keep them in the freezer and I have one square every night after dinner! It’s a great way to end the day on a sweet note without filling my body with yucky things!
1 square of dark/bittersweet chocolate (off of a baking bar – 70 cals worth)
1 1/2 T. coconut oil
1 T. fat free cream cheese
2 T. natural peanut butter
1/2 scoop chocolate protein powder
1 1/2 T. cocoa
Stevia to taste
Melt the dark chocolate in the microwave. Add the oil, cream cheese and peanut butter and soften so you can easily stir them together. Add the protein powder, cocoa and stevia. Mix well.
Form a square on a piece of wax paper. Freeze for about 20-30 minutes. Cut into 9 squares. Enjoy! (Store in the freezer)

I am leaving to go out of town tomorrow for a week. We are going to WA for a family reunion on my husband’s side. It is going to be a blast and we are so excited! I will have internet access off and on and I will post a few recipes but not as many as I normally would. I just wanted to let you all know so you don’t think I’m just slacking! Here’s another little taste of my wackiness. Let me explain my thinking behind this crazy concoction. I was thinking about butterscotch. Mmmm, butterscotch. Then I remembered some cookies I used to have as a kid where you melt the peanut butter and butterscotch chips and stir in … what… cornflakes? I can’t remember. But, man, where those good. Did you guys ever have those?
Anyway, I got to thinking, I could make those cookies with Fiber 1 cereal. Then the butterscotch would be the only downfall of the recipe. Granted it would be totally worth it because …. Mmmmmm, butterscotch. J Still, I was trying to think of a way to healthify the recipe. Then I remembered my goo! That is how the Carmel Goo Cookies were born.
Start with the Original Carmel Goo




Stir in ½ cup Fiber 1 cereal and about 15 chocolate chips. If you can handle the wait, which I’ve never been able to do, I bet this would harden up a little in the fridge and you could break it into little cookie pieces. But I just eat it as is with a spoon.
There is no butterscotch to be seen in the recipe, but it is still so yummy and so filling!
(I doubt this would pass the husband test. I can see him taking one look at it and walking the other way. Too weird for him. And he hates Fiber 1. He says it tastes like a cardboard box. And it does. But, remember, I like cardboard boxes.)

Oh, this has got to be a new favorite of mine. It was SO GOOD! Here’s the mix:
Loaded Oatmeal Base mixed with:
- 1 T. lf cream cheese
- 1 T. ff sf cheesecake pudding mix
- 1/2 scoop vanilla protein powder
- 1/4 cup cottage cheese
Topped with:
- Strawberries
- 1/2 graham cracker, crushed
- 1 T. lf cream cheese (yes another one to take bites off of)
This really did have a cheesecake like flavor! It was awesome!

Today is going great so far. I got up at the crack of dawn to teach boot camp. Today was the first morning that I awoke with a great big jump because I thought I had missed it. I remember thinking to myself, “It is way to light out to be 5:40am! I missed it!” But no. It is just getting closer to summer! Workout was great. We went to Caleb’s school this morning to see what class he is in next year and I think he got a good teacher so I’m excited about it. There are a few kids from his class this year in his class next year so he’s excited too.
We had a great Memorial Day! We went to the zoo with my brother and sister in law and their kids and mother in law. It was crowded but it didn’t really feel like it. We didn’t have to wait too long to see anything. After the zoo we went to my sister in law’s for a great big bbq. The food was awesome, the company was great and they had a bounce house for the kids! Everyone was happy and that, in turn, makes me happy!

I apologize that I haven’t been a very good poster today. I actually haven’t even photographed any of my meals (still getting used to this whole blogging thing!) so I am putting on a recipe, or more like “idea”, I made a few weeks ago and hadn’t posted yet. Try this! It’s great! (PS. I have a funny story after the recipe so don’t leave yet!)

Today I had a ripe pineapple and wanted something sweet to dip it into. I made my little protein carmel cream cheese creation (this works as so many things!!!) and stirred it into some plain yogurt and presto! You’ve got a great fruit dip!
- 1 1/2 oz fat free cream cheese
- 1/2 scoop vanilla protein
- 1 T. sugar free Da Vinci Carmel Syrup
- Stevia to taste
Stir that into about 1/3 cup plain yogurt. Enjoy with fruits, veggies, pretty much anything!

This morning Saundra and I did our first “long” run for our race. I put the word long in quotes because to many people 4 miles isn’t long. To some it is short. But to me it is long. And I was nervous about it. We want all of our long runs to be mainly down hill because that’s how the race will be. So, we parked my car at the mouth of Hobble Creek Canyon and drove her car up 4 miles. We parked at a camp ground and began our run. It actually felt great! No knee pain or heel pain (I think I may have a heel spur… getting x-rayed on Monday. I’ve had whatever it is for a while and it comes and goes. So this is not a new thing) and the run felt awesome. We chatted the whole time and that made the miles fly by.
We get to my car 40 minutes later only to realize I didn’t have my keys. And neither of us had our cell phones. I haven’t done this whole “leave-one-car-drive-the-other-one-up-a-canyon” thing much so I didn’t even think twice about just brining my keys with me and leaving them locked in Saundra’s car. Silly me. Here we are 4 miles downhill of my keys. Turns out I know a few of Caleb’s friends moms that live in a neighborhood close by. So, we jogged to one of their houses but she was out of town. I used their phone to call Brandon and he came and picked us up. To get out to the road to meet him we had to go up a big hill and out through the neighborhood. All in all, we ended up going about 5 1/2 miles. After the first four we walked a little bit because my legs were shot. I was proud of myself and I’m ready for the real 5 1/2 miles next week!
Question of the day: What is the farthest you’ve ever ran and why (training for an event, just for fun, etc.)?
My Answer: 6 miles. I’ve done this a few times. I’ve ran a 10k and attempted training for a half marathon but then quit because I didn’t like it. Lame reason, I know.

Do you like cheesecake? If so, you’ll love this new shake combo I came up with! It is so good! And, like the rest of the shakes in my “thick and frothy” line, it is a BIG shake. Here’s what’s in it:

- 1/2 cup milk
- 1/2 cup egg beaters
- 1 scoop cookies and cream protein powder (this made an oreo cheesecake – use vanilla protein powder and berries for berry cheesecake)
- 1/4 cup cottage cheese
- 1 T. low fat cream cheese
- 1 truvia packet
- 8-10 ice cubes
Mix up and pour into a BIG cup! This one is so good, you guys!

In my world today:
I feel like I’ve been going nonstop today! I probobly won’t have much time in the next few days to update but I will make sure to get a recipe up here. I’ll update you all on life when I have a second!

I know this is similar to what I posted yesterday and for that, I apologize. But this was so good I just had to get it up here. Keep in mind I’m not doing any carbs for another week and a half, so this may have tasted better to me than it would to most. But Brandon liked it and he rarely likes the crazy things I make up. So here goes:
Omlet: Mix these ingredients in a blender:
- 3 egg whites
- 1/4 cup cottage cheese
- 1/4 scoop chocolate (or any flavor) protein powder
- Stevia
Pour into a large (10 inch) pan and cook and flip like you would an omlet.
Meanwhile, make the filling by combining these ingredients in a small bowl:
- 1 1/2 oz fat free cream cheese
- 1/2 T. DaVinci Carmel Syrup (found in the coffee creamer ailse)
- 1/2 scoop vanilla protein powder
- stevia
Stir until well mixed. Take the omlet off the stove and transfer it to a plate. Spread the cream cheese mixture over half the omlet. Fold in half and enjoy!
I promise, you’ll LOVE this one!!!
In my world today:
I have used my beloved blender 9 times since I got it yesterday. Despite it’s hefty price tag, I am pretty darn sure I’ll get my money’s worth with this baby. In fact, I don’t ever think I’ll need another blender in my life (or at least for 7 years). I used to have to get a new blender about every year because I use them about 3 times a day and they get burned out easily. Look how pretty this looks:

This was a great shake. It was so thick I almost had to use a spoon and it had the consistency of ice cream. I wonder if I were to freeze it if it would stay creamy or get icy like a lot of shakes… Hm. I’ll have to try that because this would be a great thing to have when the rest of the fam is having ice cream.
Here’s the combo:
- 1/4 cup milk
- 1/4 cup egg beaters
- 1/2 scoop chocolate peanut butter protein powder (or just chocolate)
- 1/2 T. peanut butter
- 1 T. sf ff chocolate pudding mix
- 1/2 T. lf cream cheese
- 2 T. cottage cheese
- 1 packet truvia
- 7 ice cubes
Blend all that together and you’ve got yourself a chocolate peanut butter cheesecake in a cup! (If the ingredient amounts seem wierd it’s because this shake would have had 470 calories if I had used “normal” amounts. So, I halved everything and you’ve got this wonderful treat for 235 cals!)
In my world today:
I got a great workout in today. I did 45 min lifting with 15 min HIIT on the stairmill afterwards. Phew. It was a good one! Be watching for my “Power HIIT” workout coming this weekend. You’ll want to try it for sure. One the agenda for today:
- Clean out my closet (I’m starting my spring cleaning and I’ve chosen one room per week for the next 8 weeks; then I split that room up into parts to tackle daily. In 8 weeks I’m having a big garage sale!)
- Organize stuff I already have set aside for garage sale
- Take Brynley to get her picture taken
- Babysit Saundra’s kids so she can clean her house for her jewelry party
- Go to Saundra’s party tonight, eat veggies and dip and have fun with the girls!

Here’s a wacky one for today. I am in love with this stuff. I want to marry it. It can be eaten straight out of the bowl (this is how i love it) or used as a frosting on a healthy “cake” or muffin. (I will feature many healthy “cakes” in time). Here’s the recipe:
1 T. natural peanut butter
1 T. low fat cream cheese
Microwave these two for about 10 seconds just to soften, then stir together.
Add:
½ T. Carmel DaVinci Sugar Free syrups (got at Wal Mart for a few bucks by the coffees – these are also great in shakes!)
½ scoop vanilla protein powder
Splenda to taste
Stir all that yummy goodness together and you have … Carmel Goo! All that for only 200 calories! What do you all think?


In my world today:
I stepped on the scale this morning and guess what was staring back up at me? My good old pre pregnancy weight! I’m so excited! My measurements still have a little bit to go but I’m getting there! I’m so excited! It took me about 15-18 months to lose it with my first two and my baby’s only 6 months old! I’ve learned that I can’t restrict myself too much when it comes to food. I feel best eating healthy food and that’s what I choose to eat but I definately include things that other people wouldn’t. It’s all about moderation and counting calories for me.
Anyway, winter decided to poke his little head back into my life. It was 21 degrees when I woke up this morning! That didn’t stop me from heading to the gym and getting in a great workout. Caleb’s got a friend over today and on my to do list are cleaning out the medicine cabinet (I don’t even know all the stuff that’s in there!) and cleaning off my “to do” counter. Wish me luck!
