Lemon Cream Pie Crepe

There are a million variations you can test out of this recipe but here is the one I had today and it was oh so good.

4 egg whites
1 t. lemonade crystal light powder

Blend the above in a blender or magic bullet.  Cook like an omelet.

Meanwhile, blend 1/4 c. cottage cheese with 4g (1/2 serving) of cheesecake sf jello pudding powder in the magic bullet until well blended and creamy.

Flip the eggs when they’re ready to be flipped.

100_2184When the eggs are cooked through, put the filling down the middle of the egg whites and roll up like a crepe!  All that goodness for just over 100 calories?  Seriously, folks.  Try it.

(Experiment with different flavors of crystal light and pudding.  I’m thinking of strawberry banana eggs with cream cheese filling and actual strawberries and bananas or adding cocoa and Truvia to the eggs and for chocolate eggs and butterscotch cottage cheese filling for a sweet dessert crepe.  MMMMmmm…..)

Butterscotch Peanut Butter Protein Mousse

½ c. cottage cheese
¼ c. plain greek yogurt (or regular plain yogurt)
1 T. low fat cream cheese
1-2 T. sugar free/fat free butterscotch pudding mix
½ T. peanut butter
¼ t. xanthum gum (optional, but it makes it really thick – can be found in the baking aisle – pretty expensive – $10 bucks-ish – but it will last forever and you can add to smoothies too to make them extra thick!)
Truvia packet

Mix the above in a magic bullet or blender and enjoy the thick, fluffy creaminess of Protein Mousse!  (Stay tuned for more flavors!  I see a new line of Protein Mousse coming …)

Cordial Cherry Pudding

Talk about a healthy holiday recipe right here!  If you love chocolate covered cherries, you will LOVE this one!

Start by throwing these things into your magic bullet or blender:

  • 1 container cherry yogurt (I use weight watchers brand because it doens’t have high fructose corn syrup OR aspertame)
  • 1/2 c. cottage cheese
  • 1 T. low fat cream cheese
  • 1 T. cocoa
  • 1 packet Truvia (Stevia)

Blend all that goodness up and put into your bowl.  Top with about 15 chocolate chips and enjoy!

Quiche in a Bowl

I threw this together the other night quite randomly and I LOVED it!!! 

I started by scrambling some eggs, one whole egg and two whites to be exact, with some veggies, brocolli, onion and zuchinni to be exact, again.  After this was all scrambled and cooked I threw it over 1/2 cup of cottage cheese and topped with 1/2 T. real maple syrup.  The syrup gave it a yummy breakfast sweetness.  Brandon topped his with salsa so whichever way you want to go with it will be fantastic!

Flavored Cottage Cheese

This is a fun, different way to enjoy cottage cheese.  All you do is simply make up some sugar free jello, any flavor and blend up one serving of it with 1/2 cup of cottage cheese in the blender.  Top with fruit, if desired, and enjoy!  The lime/strawberry combo was a great, refreshing, protein packed, low calorie snack!

This is such a yummy snack!  I love cottage cheese.   I love it even more topped with cinnamon and stevia.  AND I love it even MORE topped with cinnamon, stevia and almonds!  Yum!  This is a tasty treat!

Someone contacted me the other day and asked if I would try out this new product for 30 days and review it for all of you!  At first I was hesitant.  I didn’t want to commit to 30 days of something if I wasn’t comfortable with it.  After reading up on the product, I actually think it’s really cool.  Let me give you a description of each product:

  1. “Flush”:  A gentle, organic, highly effective daily colon cleanse.  This is supposed to boost fat burning, increase nutrient absorption, decrease bloating and create a flatter stomach, improve digestion, remove toxins, restore energy and support weight loss.
  2. “Cheat”:  This is the worlds firs “food sprinkle”.  It is a fiber product that you sprinkle on your food.  This is said to make you feel full faster.  Double blind clinical studies have shown that this product eliminates up to 25% of the calories you eat and is proven to aid in weight loss.
  3. “Accelerate”:  All natural, thermogenic fat burning supplement.  This is supposed to stimulate the thermogenic fat burning process and boost metabolism.  It is also supposed to help supress appetite and promote energy and stamina.
  4. “Lean”:  Breakthrough power amino acid and protein smoothie.  This is said to satisfy appetite, reduce food cravings, support fat metabolism and increase energy.

That is the product description that I pretty much stole from their website.  I also looked further into the products and I am comfortable and confident that they are all natural (some organic) and safe. 

I told the person who contacted me that I would use them as reccomended and I would provide you all with starting stats (gulp) and after stats.  Talk about pressure!  I would love to lose the last 5 pounds of baby weight that are hanging around on this tummy and these thighs.  The website touts that you can lose 10 pounds in a month simply by taking these products.  Is that true?  Hmmm… not sure.  So I’m going to try it out for you!  I am going to try not to alter my diet too much so that the results I achieve will be due to the products and not me changing my lifestyle.  I will keep the same type of workout schedule (about 5 hours a week with 3 days of lifting weights mixed with cardio and 3 cardio sessions) and try to eat similarly to what I am currently doing. 

I will have starting information tomorrow.  I’m really nervous to post pictures for you all… I’m not sure why.  I normally don’t mind things like this.  Maybe because this website has a lot more viewers than I’m used to posting pictures for!  But I have a new swim suit so I’ll just pretend I’m just showing you guys a picture of my new suit, ok?  (Phew, pressure gone.  Yeah right…)

Here’s another simple yet fabulously tasty snack for you all to try.  It’s very easy.  Stir these yummy things together in a bowl:

  • 1/2 cup cottage cheese
  • Sliced strawberries
  • Almonds
  • Cinnamon
  • Truvia or Splenda

Hey guys, how are things?  Today we’ve got my daughter’s dance recital!  I’m so excited about it.  It’s going to be so cute.  Yesterday was her dress rehearsal.  She was on a big stage with all the professional lighting and music and everything.  Afterwards she would not stop talking about it, “Mom, did you see me?!  That was so fun!  The music was so loud?  Could you hear it?  That was so fun!  Did you see me?”  It was really cute.

I’ve also got a consult for Lasik Surgery today!  I’m really excited to learn more about it.  I’m pretty sure I’m a good candidate as my eye dr has been telling me for years I should get it done.  That’s about it around here today.  I’ve got to flyer another neighborhood for my next boot camp.  For details on the next camp see the boot camp link at the top!

Cottage Cheese Wasa’s

Alright you guys, it’s time for a heart to heart.  I don’t have time right now for this whole continuous blogging thing.  I don’t want to stop this website though.  Posting one recipe per day was much better for my schedule and stress levels.  I’m going to go back to that.  I will still keep you updating on my life and training but there won’t be pictures of all my food.  Is that ok?  How do you guys feel about that?  I still want to try and get giveaways and product reviews so I will still need your support, page views and comments!  So keep on coming back!

Here is a snack idea for you guys for today:

Have you ever put truvia or splenda on your cottage cheese?  Well, if not, you need to start.  Right now.  It is heavenly.  Cinnamon, too.  But it needs to be the Saigon Cinnamon from Costco.  Once you try that, you’ll never go back.  I promise.  It has this sweet/spicy flavor that is to die for!

Anyway, on to the snack idea for today.  We’re using Wasa crackers.  These taste like a cardboard box if you don’t put anything on them.  But, I still like them.  Yes, even plain.  I like cardboard boxes.  Remember, I’m weird.  I get the fiber crackers.  They also have multi grain but I always get the fiber ones.  I’m not really sure why I do.  I just do.  

 

Ok, moving right along.  Take a Wasa cracker and top with ¼ cup low fat cottage cheese.  Then sprinkle cinnamon and splenda on top and enjoy!  I usually eat two of these at a time for a nice, filling 160 calories.  What a great afternoon snack!

Today Saundra and I had our short run for the week.  It was 2 1/2 miles and we did it in 25 minutes.  It was hard but it felt good.  I’m getting my foot x-rayed today to see if I have a heel spur.  My dad is a foot doctor so that works out nicely. :)   It’s not hurting too badly and neither is my knee (thankfully) but I just want to know I’ve got one.  I’ll let you know what I find out.  I am going up to Provo today to look at some parks and try to find a nice location for my next boot camp.  What do you guys think about a boot camp in a park?  Lame or nice and refreshing?  Well, I hope you all have a great monday!

Thick and Frothy Cheesecake Protein Shake

Do you like cheesecake?  If so, you’ll love this new shake combo I came up with!  It is so good!  And, like the rest of the shakes in my “thick and frothy” line, it is a BIG shake.  Here’s what’s in it:

  • 1/2 cup milk
  • 1/2 cup egg beaters
  • 1 scoop cookies and cream protein powder (this made an oreo cheesecake – use vanilla protein powder and berries for berry cheesecake)
  • 1/4 cup cottage cheese
  • 1 T. low fat cream cheese
  • 1 truvia packet
  • 8-10 ice cubes

Mix up and pour into a BIG cup!  This one is so good, you guys!

I feel like I’ve been going nonstop today!  I probobly won’t have much time in the next few days to update but I will make sure to get a recipe up here.  I’ll update you all on life when I have a second!

Cottage Cheese Stuffed Protein Crepe

This is a way yummy, sweet breakfast when you’re trying stay low on the carbs.  Here’s what you do:

  1. In a blender, blend 3 egg whites, 1/4 scoop vanilla protein powder, cinnamon and truvia.
  2. Pour it into a large pan and cook until it’s done enough to flip.  Then flip it and cook through.  It will be big and thin like a crepe.
  3. Put it on your plate and spread 1/3 cup cottage cheese down the middle .
  4. Sprinkle with more cinnamon and truvia.
  5. Wrap up and eat like a crepe!

Using fat free cottage cheese this recipe has 131 calories and 24 g protein.

In my world today:

I’m going to bite the bullet and get something I’ve been wanting for years.  I’m getting a Bendtec!  (Same thing as a Vitamix).  I’m so thrilled about it!  I’m going to Costco when Aubrey wakes up from her nap to get it.  I can’t even explain how excited I am!  Anyway, the rat, now named Ralphy, is doing very well.  He’s really cute.  Caleb’s really warming up to him.  My low carb stint is going well.  Today I do a refeed.  Basically a refeed is when you eat a lot of low fat, low sugar carbs, things like breads, rice, potatoes, etc.  This serves to help refuel  your hormones and also can help stop metabolic slowdown that is associated with diets in general.  It should be fun!  I’m making pancakes for lunch!
