Chocolate Pumpkin Cheesecake

I think I’ve posted a variation of this before but this is the best version by far!

½ c. cottage cheese
¼ c. greek yogurt (or regular plain yogurt)
1 T. low fat cream cheese
1/3 c pumpkin
1 T. cocoa
1 T. sugar free fat free cheesecake pudding mix
Stevia

Blend together and top with 15 chocolate chips!

Chocolate Chip Pumpkin Pancakes

These pancakes are so good and they are a very common Sunday breakfast at our house in the winter.

2 c. whole wheat flour
3 T. brown sugar
2 t. baking powder
1 t. baking soda
1 t. ground allspice
1 t. cinnamon
½ t. ground ginger
½ t. salt
1 ½ c. milk
1 c. pumpkin puree (canned pumpkin)
1 egg
2 T. vegetable oil
1 T. vinegar

  1. In separate bowl, mix together the milk, pumpkin, egg, oil and vinegar.  Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in another bowl.  Stir powder mixture into pumpkin mixture just enough to combine.                                            
  2. Heat a lightly greased griddle or frying pan over medium heat.  Pour desired amount of pancake batter onto griddle and brown both sides.  I always press about 7 chocolate chips into the pancake after I’ve poured it on the griddle.  Serve hot with natural syrup or some peanut butter.

These cook up SO full and fluffy!  Almost like a big cookie!  You’ll love them!

Cordial Cherry Pudding

Talk about a healthy holiday recipe right here!  If you love chocolate covered cherries, you will LOVE this one!

Start by throwing these things into your magic bullet or blender:

  • 1 container cherry yogurt (I use weight watchers brand because it doens’t have high fructose corn syrup OR aspertame)
  • 1/2 c. cottage cheese
  • 1 T. low fat cream cheese
  • 1 T. cocoa
  • 1 packet Truvia (Stevia)

Blend all that goodness up and put into your bowl.  Top with about 15 chocolate chips and enjoy!

Chocolate Chip Granola

I got this recipe from Heather at Heather Eats Almond Butter.  I used the lesser amount of honey instead of Agave because I was low on Agave Nectar.  Because of this they were a little drier so I made granola instead of cookies like Heather did.  Try it either way though!

1 c. oats, toasted (toast for about 5 minutes in a 350 degree oven)
1/2 c. peanut butter
1/4 c. honey
1/2 c. chopped nuts
1/2 c. coconut
1/2 c. chocolate chips or dried fruit (I used chocolate chips of course…)
1 t. vanilla
1 t. cinnamon

Combine all ingredients in a bowl with a spoon or mixer.  Press onto a cookie sheet and bake for 10 minutes at 325 degrees.  When it’s cool crumble it up and keep in a ziploc baggie. 

This is so good!  But WATCH YOUR PORTION SIZE as this is kind of high in calories!  Approx 1/4 c. has 200 calories.  Enjoy with milk on top like cereal or with milk on the side like cookies!

Chocolate Chip Muffins

Chocolate Chip Muffins

Wet

  • 2 T ground flax + 6 T water, whisked (replaces 2 eggs)
  • 1 t vanilla extract
  • 1/2 cup agave (or you could use maple syrup probably)
  • 1/4 cup organic virgin coconut oil
  • 1 cup mashed ripe bananas (2 small)
  • 1/2 cup non-dairy milk (I used hemp)

Dry

  • 1 3/4 cup whole wheat flour
  • 2 T wheat germ
  • 1 t cinnamon
  • pinch of nutmeg
  • pinch of fine grain sea salt
  • 1 t baking soda
  • 3/4 cup chocolate chips

Directions: Preheat oven to 325F. Whisk the dry ingredients in a medium sized bowl. In a small bowl, whisk the flax + water to create the ‘eggs’. Allow it to sit for a few minutes. In a large bowl, mix the wet ingredients together. Add flax mixture and whisk. Fold dry ingredients into the wet ingredients being careful not to over stir.  Stir in chocolate chips.  Place batter in a pre-greased muffin pan.  Bake for 18-20 minutes. 

These are SO good!  They are best within a few days though so whatever you don’t think you’ll eat right away stick in the freezer to keep them fresh.  I adapted this recipe from one found on Angela’s site, Oh She Glows.  She’s got some mean baked goods going on at her place!

Try this topped with Peanut Butter Banana Spread for a really great treat!

My Homemade “Candy Bar”

These little suckers, my friends taste just as good as a candy bar!  For those of us healthy eaters they may even taste better!  I think they do!  I’ve even got my husband eating these for a post dinner treat.  THAT means they’re really good!

Just take a date (get the “Fancy Medjool Dates” from Costco, they make this treat SO. MUCH. BETTER) and slice open down the middle.  Remove the pit.  Spread 1/2 T. almond butter (or peanut butter) down the middle.  Line 4-5 chocolate chips down the center and put the date back together.  Savor this treat with small bites!  You will love it!  You could even put these together and bring them with you as a portable snack!

Dessert Wrap

This wrap had so much sweetness and I loved it!  I also brought it with me to a museum with the kids so the chocolate chips were soft and it was so good!

I used a Flat Out wrap and spread 2 T. of peanut butter down the middle.  I sliced 1/2 a banana down the middle and sprinkled with about 10 chocolate chips and 1/2 T. agave nectar (you can use honey).

So I started p90x yesterday.  I love it!  Have any of you guys done it?  I did the Chest and Back video yesterday and I am so sore today!  It feels so good.  This morning I did the plyo video.  I was really scared about this one.  I was worried it would be so hard I wouldn’t be able to get through it or would have to stop a lot.  It was totally doable, for me at least.  I didn’t have to stop at all but it kept my heart rate really high.  I loved it! 

One thing I love about it, is that it keeps me from getting bored.  There is a count down on the screen for he entire workout and also for each segment.  It is set up in circuits of four exercises that you repeat after you complete each circuit once.  The whole set up is great for exercise ADD people like me.

 I’ll keep you guys posted on what I think of it as time goes on.

Banana Soft Serve

If you frequent the food blog world you have seen banana soft serve floating around.  It is very easy, very refreshing and very sweet.  It is very easy too!  All you do is slightly thaw two frozen bananas and blend them up!  I used the magic bullet so it was in a smaller cup.  It might be hard to blend at first but just keep on going and soon you will have a very thick banana soft serve! 

And what concoction would be complete without some toppings?  I did peanut butter, coconut and chocoalte chips. 

This is a great and refreshing treat for a summer afternoon!

Peanut Butter and Chocolate Frozen Banana

I love frozen bananas with peanut butter in them.  Today I wanted a little chocolate in the mix too, though.  I chopped up some chocolate chips and had them at the ready!

I took a banana and sliced it lengthwise.  Then I spread about 1 1/2 T. of almond butter (you can use natural peanut butter) down the middle.  I finished it off by pressing the chopped chocolate chips into the almond butter and putting the banana back together again!  I wrapped it in plastic wrap and put it in the freezer for about a full day.  I always eat these totally frozen.  They are a yummy frozen treat!

Chocolate Peanut Butter Mousse

Talk about yummy!  The other day I really was feeling like some peanut butter and chocolate chips (one of my favorite combo’s unfortunately).  I decided to try to fit some healthier things into the mix.  Here’s what went in:

  • 1/4 cup plain yogurt
  • 1 T. cocoa
  • stevia (Truvia) to taste
  • 1 T. natural peanut butter
  • 15 chocolate chips

I put it in a small little bowl and ate it with a teeny little baby spoon. :-)   It made me savor every bite!  I hope you try this one when you really need some chocolate!
