Homemade Bbq sauce on Cheddar Bacon Chicken (YES, it’s healthy!)

One of my clients told me that she made her own barbecue sauce by mixing salsa, Worcestershire sauce, liquid smoke, Truvia and mustard.   I tried it and it was amazing!  You’ll have to play with the amounts of ingredients to see what you like best but here is a starting point:

  • 1/4 c. salsa
  • 1 T. Worcestershire
  • 1 t. liquid smoke
  • 1/2 T. mustard
  • 1 pkt Truvia

To be honest, I just threw the ingredients in there so those amounts are a total guess.  But you can start there and adjust for your preferences.  Use this sauce in place of bbq sauce because the ingredients are natural and sugar free!

I made some amazing chicken with it.

100_2178 I started with already cooked chicken breast.  I laid a strip or two of turkey bacon over the top, poured the homemade bbq sauce on the bacon and topped with a little bit of cheddar cheese.  Then I baked that for about 20 minutes and 350.  Meanwhile I mixed up more bbq sauce and stirred in about 1/2 T low fat Ranch and tossed a whole bunch of spinach in the dressing.  When the chicken was done, I threw it on the spinach and topped it with about 1/2 an avocado.

This.  Was.  Heaven.  Even the hubs loved it.  We had it again a few days later and he was so excited about it.

Do you have any recipes for homemade sauces you’d like to share with me?

Chicken and Apple Wasa

100_2086

Make a chicken salad with about 2-3 oz cooked chicken, shredded to 1 T. low fat mayo.  Top a Wasa cracker with 1 low fat laughing cow cheese wedge, apple slices and chicken salad.  What a tasty little snack!

Honey Sweet Leftover Stirfry

Ever wondered what to do with that last little bit of brown rice and half breast of chicken in your fridge?  Ok, have you ever wanted it to taste really really good?

100_2023

It’s easy!  Just pull out whatever veggies you have in your fridge.  Today I had bell pepper, carrots and celery and sauté them in some coconut oil.  Cut up your chicken and add that and the brown rice to the pan.  Saute until warmed through and crispy.  Add 1 t. agave nectar and 1 t. soy sauce to the mix and stir!  SO GOOD!!!

Salsa Chicken

100_1899

In a crockpot, throw in some chicken breast, one can of cream of chicken soup, ½ c. salsa and a can of Lime and Cilantro Rotel.  Cook over low heat about 6 hours or until dinner time!  I served the fam’s with rice and salad and I had mine over salad with the sauce acting as the dressing.  It was fabulous!

Sandwich Overload

100_1399

This title was previously called “Salad on Toast” but how boring is that?  So I spun it and thought of it as an open faced sandwich with veggie overload!  Now THAT’S exciting!  Here is this yummy little lunch idea:

Make a salad however you’d like to.  I usually do this when I’m just having a boring old salad with just chicken or something.  Toss the salad and chicken with your dressing (choose plain balsamic vinegar for 0 calories and sugar).

Toast a piece of bread and top is with guacamole.  Or not.  Whatever.  I like it that way but it’s still good if you don’t have guacamole.

Dump your salad on top of the bread and cut bread bites with each salad bite!  This is such a yummy lunch!

Italian Chicken Pasta Toss

100_1309

Italian Chicken Pasta

6 oz uncooked bow tie pasta (about 3 cups)
2 plum tomatoes, diced
1 small onion, chopped
1 medium zucchini, sliced
1 small yellow or red bell pepper, cut into thin strips
½ pound boneless, skinless chicken breasts cut into 1-inch strips
2 t. olive oil
1 large garlic cloves, pressed
½ c. frozen peas
1 t. Italian seasoning
1 t. salt
¼ c. grated fresh parmesan cheese (optional)

  1. Cook pasta according to package directions; drain and keep warm.
  2. Meanwhile, dice tomatoes and chop onion.  Slice zucchini.  Cut bell pepper into thin strips and chicken crosswise into 1-inch strips.
  3. Heat oil in skillet over medium-high heat until hot.  Press garlic into skillet using a garlic press.  Add chicken.  Stir-fry 5 minutes or until chicken is no longer pink, turning occasionally.  Reduce heat to medium.  Add onion, zucchini, bell pepper, peas, seasoning and salt; stir-fry 2 minutes.  Add tomatoes; heat 1-2 minutes, stirring gently until heated through.  Remove from heat.
  4. Stir in warm pasta.  Sprinkle grated parmesan cheese over pasta.  Serve immediately.

Honey-Lime Grilled Chicken Breasts

Here is another recipe from “Squeaky Gourmet”, the cookbook I have the pleasure of reviewing.  This grilled chicken had such a refreshing and light flavor and the whole family loved it!  Even my kids ate every bite I gave them.

P1020483

Marinade:

1/2 cup chopped fresh basil (4 T. dried)
1/2 cup canned low sodium chicken broth
1/4 cup lime juice
1 T. honey
2 t. dijon mustard
2 garlic cloves-mashed
1/2 t. salt
dash pepper

Put all of this in a large ziploc with 4-6 thawed chicken breasts.  Allow the chicken to marinate for at least 3 hours.

Heat your grill to medium heat, then turn down your heat and cook the chicken over low to medium depending on how hot your grill is.  Cook until there is no pink in the center.

This chicken is GREAT for a summer bbq!  I hope you all try it!  If you want to order “Squeaky Gourmet” go here.  Use the code Squeakyfor10 to save $10 off the cover price!

Bbq Ranch Chicken Salad

100_0869

Here’s an easy salad idea for you.  Grill up some chicken with any seasoning (I used “Kickin’ Chicken).  Throw that and your toppings on your salad.  I topped my salad with bell pepper, red onion and chicken.  For the dressing stir together equal amounts of bbq sauce and low fat ranch.  I used 3/4 T. of each.  This is such a yummy, different tasting salad!  Perfect for a light lunch!

Chicken Veggie Salad

100_0628

I wanted to use up some chicken today but wasn’t really feeling the traditional salad vibe.  So, I got out all the veggies I had in my fridge (cucumber, orange bell pepper, celery, onion, and brocolli) and cut them up into chunks.

Then I added my chicken.

And topped with some low fat salad dressing.  (This is actually homemade Cafe Rio salad dressing – 12 cals/T.  Seriously.  The recipe is here.)

It was a great alternative to a regular old salad!

A few updates:

-Core4 is going great.  I ate quite a bit less food yesterday than I normally do on a Sunday, yet I felt full and satisfied even still.  This is great news for me!
-I have 8 assessments for my next boot camp today!  Ah!  Crazy!
-I am getting my Lasik Surgery on Wednesday!  Two more days of these aweful glasses!
-My to do list is about two miles long today so I need to get cracking!

Have a great day, friends!

Nutty Chicken Salad

000_0004

Oh my gosh.  This salad is so good!  It has all the elements of a good, summery salad.  It’s got a light flavor, strawberries, swiss cheese, egg, bacon, and lots of other yumminess.

Salad ingredients:

  • Romaine lettuce
  • Grilled Chicken
  • Red onion
  • Raspberries or strawberries
  • Swiss cheese, grated or thinly sliced
  • Bacon, cooked and crumbled
  • Pecans, chopped

Dressing Ingredients:

  • 1 t. oil
  • 2 t. white vinegar
  • 3/4 t. low fat mayo
  • 3/4 t. sf maple syrup
  • 3/4 t. brown sugar

The dressing has about 70 calories.  The calories in the salad depend on the amounts of the ingredients you put in.  This salad is a great flavor combination!  I hope you try it!

Well, the results of the “One Plate Challenge” are in.  And… I forgot my camera.  I’m so sorry.  I couldn’t go home to get it.  You’ll have to just trust me on this one.

Here’s what I had:

  • A little bit (1/4 cup?) of a really good bean salad with avocado
  • The same amount of a yummy pasta salad
  • 1 1/2 chocolate chip cookies
  • 1 really good brownie with cool whip and strawberries
  • 1/2 of a yummy pudding-ish dessert with a graham cracker crust

I admit, its more that I planned but I could’ve eat much more so I was proud of myself.  I left feeling like I had had some good treats but not overly stuffed and I was happy about that, too.  I am also happy that the crazy week of a million bbq’s is over and I can go back to eating normally without all the temptations to indulge!  I like indulging every once in a while but this last week has been a bit ridiculous.

I will attempt the “One Plate Challenge” another time when I have my camera with me!

Today is a day to get a bunch of stuff done around the house.  I have all sorts of laundry, kitchen cleaning, spring cleaning/getting things sorted for the garage sale, and other things to do.  The kids slept in until 9am, which is completely crazy for my kids, and were outside playing with neighbors by 9:30am.  I love summer!  Now, if it would just get a little bit warmer so we can start hitting the pool I’ll be good to go!
