Black Bean Avocado Quesadilla

(This was so good I completely forgot to get a picture of the finished product.  All it looked like was a tortilla anyway.  The insides are the yummy part.)

In a bowl combine desired amount of black beans and avocado.  Mash them together with a fork until it is a paste, or whatever consistency you want, really.

Make a quesadilla by spreading your bean paste (ew) over half the tortilla and adding a little bit of cheese to the top.  You don’t need much cheese because of the other fillings.  Cook on the stove top as you would a normal quesadilla and enjoy!

Hot Avocado and Swiss Sandwich

Hey guys!  Here’s a sneak peak at my lunch today and then part of the big news is at the bottom of this post!

Here are the three simple ingredients to my Hot Avocado and Swiss Sami:

It’s very easy really.  Just take two wedges of low fat Laughing Cow Swiss Cheese and spread one on each side of a Sandwich Thin (you can use bread but Sandwich thins are WAY better!  They’re made by Orrowheat and can be found by the bread or buns at the grocery store.)  Then slice some avocado and make a sandwich out of it!

You can then eat as is but I like it warm.  So I throw it on the George (indoor grill or panini maker).  It melts the cheese a little and makes it so oooey gooey.

 So you may be thinking, cheese AND avocado?  That’s a lot of fat.  Remember FAT does not make us fat.  TOO MUCH FOOD makes us fat!  Healthy fats like the ones found in avocado are oh so very good for you.  They do wonderful things like increase hormone function, help skin, hair and nails, make you feel full and satisfied longer, increase your metabolism, decrease bad cholesterol and increase good cholesterol and so many more things. 

So go eat up this Avocado and Swiss Sami and get in your healthy fats!

Spicy Tuna Stuffed Pepper

Hey everyone!  There are some big changes going on around here this week!  I will let you know later in the week what is going on.  You may not hear from me much this week but I will definately keep you posted on the progress of my little secret. :-)   And now, on to the recipe!

100_1487I got this recipe from my friend Saundra and it is SO good!  So easy too!

Take a can of tuna and mix in:

  • 1 T. low fat mayo
  • salsa to taste (I use probobly 2 T.)
  • Diced celery
  • Diced pickles
  • little splash of balsamic vinegar
  • 2 T. chedder cheese

Warm up the mixture in the microwave until the cheese is melted to your likeness.  Then top with avocado and stuff in half of a bell pepper! 

So easy and so yummy!

Layered Meatloaf

Layered Italian Meat Loaf

 1 lb extra lean ground beef  (96/4 lean preferably)
1 8oz can tomato sauce with basil, garlic and oregano
1 egg
1/2 c. Progresso Italian style bread crumbs
1 t. garlic powder
¼ t. pepper
1 c. shredded Italian cheese blend (4 oz)
1 box (9oz) Green Giant frozen spinach, thawed, well drained

  1. Heat oven to 350 degrees.  Spray 9×5-inch loaf pan with cooking spray.  In large bowl, mix ground beef, ½ c. of tomato sauce, the egg, bread crumbs, garlic powder and pepper.  Pat half of meat mixture in pan.
  2. Sprinkle ½ cup of the cheese over meat mixture.  Spread spinach over cheese; sprinkle with remaining ½ c. cheese.  Pat remaining meat mixture on top of cheese.  Insert ovenproof meat thermometer so tip is in center of loaf, if desired.
  3. Bake uncovered 1 hour to 1 hour 15 min or until thoroughly cooked in center and thermometer reads 160 degrees.  Run knife around edges of pan.  Place serving platter upside down over pan;  turn platter and pan over.  Remove pan.
  4. In small microwavable bowl, microwave remaining tomato sauce, loosely covered, 30-60 seconds or until hot, pour over top of meat loaf.

Pizza Sandwich

I have heard all about Sandwich Thins but my grocery store has never carried them … UNTIL NOW!  Yay!  I love them!  I have put many different things between their layers and all have been fabulous.  There are only 100 calories in this yummy little bun.  You can use it in place of bread, english muffins, buns or anything! 

The one I want to talk about today is a Pizza Sandwich.  I realize this picture isn’t the best but I didn’t really want to take my sandwich apart and I couldn’t get a better picture of the wonderful insides. 

Anyway, all I did was spread some pizza sauce on each side of the bun.  I then put 2 T. cheese and sliced peppers and onions on one half and some turkey pepporoni on the other half. 

Meanwhile I cooked 3 egg whites on the stove until they were done.  Slapped those in the middle of the sandwich and put the whole thing on the George! 

And there you have a Pizza Sandwich!

Double Cheese Egg White Omlet

This is a great breakfast when you want something light.  I used 3 egg whites.  While the egg whites are cooking I add my veggies, usually peppers and onions.  When it is almost cooked through flip the omlet.  Spread 1 T. fat free or low fat cream cheese over half the omlet and top that with 3-4 T. fat free cheddar cheese.  Fold in half to melt the cheese and enjoy!

Chili Rellenos Casserole

100_1024This recipe is from the “Eating for Life” cookbook and is one of our family favorites!

 

3 cans (4oz) whole green chilies, drained
4 oz reduced-fat Monterey jack cheese/string cheese
1 ¼ c. egg substitute (Egg Beaters)
½ c. flour
½ c. skim milk
½ c. reduced-fat cheddar cheese, shredded
1 t. chili powder
2 green onions, sliced
½ c. salsa

  1. Preheat oven to 350 degrees.
  2. Lightly goat an 11×7 baking dish with cooking spray
  3. Lay whole green chilies out on paper towels.  Slice Monterey jack cheese into the same number of pieces as there are chilies.  Insert a slice of cheese inside each chili and arrange evenly in baking dish.
  4. In a medium mixing bowl, whisk together egg substitute, flour and milk.  Pour egg mixture over chilies in baking dish.
  5. Layer shredded cheddar cheese on top of casserole, then sprinkle with chili powder and green onion.
  6. Bake for 35 min or until top is golden brown and toothpick inserted in center comes out clean. 

Cut into 4 portions and top with salsa.

Week one of Core4 is over and I am down 2 1/2 pounds!  That is huge for me.  Whenever I try to lose weight it comes off about 1/2 pound at a time.  The funny thing too is that this product is said to target your trouble spots.  I was thinking, “Hm.  We will see about that.”  I lost 1/4 inch off each thigh and off my butt this week.  Hello trouble spots!  I am feeling really good taking the supplements.  I feel tight and fit and … just good.  I have good energy and all that kind of stuff.  I haven’t been  hungry all week long and my munching has really been kept to a minimum.  One complaint I do have though is that by the time evening comes I am feeling a little gassy… probobly from all the fiber I shake on my food!  I’m feeling really good though and excited to see what next week will bring!

Other news, I can still see!  At the Dr yesterday my right eye was seeing 20/20 and my left was at 20/25 just one day after surgery!  It should continue to improve for a while too!  I can’t even tell you how exciting it is to wake up in the morning and be able to see!  It is crazy.  My eyes are still pretty scratchy and sometimes my left one feels like I have an eyelash in it, which, as you all know, can be pretty painful!!!  But I can not complain one single bit!  I’m loving it!

Bacon, Sausage and Egg Cups

I saw this recipe in Jillian Michael’s “Making the Cut” book and thought I would try it out on my family the other morning for Sunday breakfast.  It sounded really yummy so I was excited.  They are way easy, too.  Here’s what you do:

  • Take 6 turkey sausage links and cook them a little in the microwave.  You just want them to be thawed enough to cut up.  Cut them into pieces and put one in the bottom of each muffin tin.
  • Take 6 pieces of raw turkey sausage and wrap it around the sides of each muffin tin.
  • Crack an egg into each muffin tin. 
  • Bake at 350 degrees for 15 minutes.  Add 1 T. reduced fat cheddar cheese to each muffin and bake for 5 more minutes or until the cheese melts.

I was a little concerned about just cracking the egg in there and not scrambling it or anything but you gotta have a little trust, right?  So, I popped them in the oven.  When I took them out to put the cheese on them they were still a little soft.  Next time I will probably cook them a few more minutes before I add the cheese.  I served these with some store bought hash browns for some carbs.

The review:  These were really good!  I actually really liked them.  You had to cut them with a fork.  It would have been too messy to pick them up and eat by hand.  But I loved the sausage, bacon and egg combo.  Yummy, I love eggs. J 

 

Did they pass the husband test?  Yes, he liked them.

Well I scheduled my appointment for Lasik Surgery!  This means I’m spending the next two weeks in my glasses.  I hate wearing my glasses.  I always feel like I look like I just rolled out of bed with them.  Probobly because thats the only time I every wear them!  I will have to wear them during my 10 miler.  I’ll have to wear them (and not sunglasses!) to the pool.  But Saundra pointed out that there will never be a totally convenient time to have to wear them and she’s right so I’m going on with it!  I’m way excited!

 

Brynley’s dance recital last night was so cute!  She did such a good job!  I’ll see if I can post a video on here later.  Today I have to finish flyering my neighborhood for my next boot camp.  I am SO sick of doing this!  I will be officially finished tomorrow and I can’t wait.  We are also going to attempt our first visit to the pool of the year!  YAY!  It just hasn’t been warm enough until now.  That’s about all going on today besides getting things done around the house which is pretty much a never ending job.

Ham and Swiss Egg Sandwich

I was full from lunch for a while but I still started feeling snacky around 3pm.  I pulled out one of my handy dandy little trail mix baggies.  That hit the spot because I ate it nice and slow, taking it one piece at a time.

The afternoon was spent doing laundry and doing lots of computer work that needed to be done.  As I was making dinner I snacked on the leftover broccolli salad from yesterday.  Man that stuff is so stinkin good!

For dinner tonight we had Ham and Swiss Egg Sandwiches.  I just put ham and swiss cheese on a fried egg and plopped that on an english muffin.  I have a tutorial for making an English Muffin Sandwich that I will post tomorrow.  They are quite possibly the yummiest, quickest anytime meal there is.  My husband has one pretty much every night that I don’t make dinner.

I completed the meal with a salad.  It’s a random combo, I know.  But it tasted great.  The salad was very fresh tasting. I topped it with my homemade tomatillo dressing.  I will get that on here soon, too.

I got a couple new clients at work tonight and they were great!  I’m excited about it!  Now I’m off to watch the Biggest Loser Finale!  Who’s it gonna be?!?!  I’m excited to find out!

English Muffin Breakfast Casserole – SO GOOD!

Ok, this was so good I had to put the actual words “SO GOOD” in the title!  I made this for breakfast yesterday morning for Easter.  Then I had another piece for lunch yesterday.  I then had a piece before AND after my workouts today.  Yes, it’s really that good.  Here’s the recipe:

  • 7 turkey sausages
  • 3 whole wheat English Muffins, cut into cubes
  • 2 T. melted Smart Start or light butter
  • 1/2 cup low fat mozzerella cheese, shredded
  • 1/2 cup low fat cheddar cheeese, shredded
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 6 eggs (I used egg beaters)
  • 1 cup milk
  • 1/4 t salt
  • 1/4 t pepper
  • 2 slices turkey bacon

Cook sausage according to pkg directions.  Cool slightly and cut into 1/4 inch slices.  Place English Muffin cubes in a greased 9×9 baking dish.  Drizzle with melted butter.  (You could probobly omit this step…  I’ll try that next time.)  Layer with sausage, cheese, onion and bell pepper.  In a large bowl, combine eggs, milk, salt and pepper.  Pour over cheese.  Sprinkle with bacon.  Cover and refrigerate overnight.

Remove from the refrigerator 30 min prior to baking.  Uncover and bake at 350 degrees for 45-50 minutes or until a knife inserted into the center comes out clean.  Let stand for 5 min.

Serves 6; 250 cals per serving (if  using egg beaters).

I think I may make up one of these for just myself next time and eat off it all week long!  I’m so loving this one!

In my world today:

I just finished my post workout breakfast casserole.  :-) Yum.  Brandon’s leaving for 80 degree weather in Austin, TX this afternoon.  He’ll be there for a few days for work.  I should be able to keep pretty busy while he’s gone.  Today we don’t have much scheduled but it’s nice outside so we’ll probobly go outside for a while.  And the house is a mess.  Gotta work on that too.  That’s about it for today!
