Very Berry Banana Smoothie

100_1475Try this for a thick banana shake!

  • 3/4 c. orange juice
  • 1/2 frozen banana
  • 3/4 scoop vanilla protien powder
  • 1/3 c. frozen raspberries
  • 1 T. sugar free fat free banana pudding powder
  • ice

Raspberry Trifle

  • 1 box angel food cake
  • 1 boxes raspberry sugar free jello
  • 2 10 oz bags of frozen raspberries, thawed
  • 4 containers raspberry yogurt
  • 2 cups light cool whip

Bake an angel food cake according to package directions.  After it cools completely cut it into cubes.

Add 2 cups of boiling water to the jello mix and stir until it is disolved.  Add raspberries to the jello and put in the fridge for about 15 minutes or until it is thickened but not yet set.  Meanwhile mix the yogurt with approx 2 cups of cool whip.

Put half of the cake cubes into the serving dish.  Pour half of the jello mixture over the cake.  Layer with half of the yogurt.  Repeat the layers and garnish with additional raspberries.

Chocolate Covered Strawberry Loaded Oatmeal

Here’s another yummy oatmeal combo for you guys!

As always, I started with the fabulous Loaded Oatmeal Base.  Then I mixed in:

  • 1/2 scoop chocolate protein powder
  • 1 T. chocolate sf ff pudding mix

Then I topped it all off with:

  • Sliced strawberries
  • 15 chocolate chips
  • 1/4 cup Kashi Go Lean Crunch (for some crunch)
  • 1 T. peanut butter

Ok, so I know that peanut butter is no where to be found in chocolate covered strawberries.  But, c’mon, it’s peanut butter.  It just HAD to be included.

Lemon Custard with Berries

I got a little creative here.  I had some strawberries that were about to be too soft so I was trying to think of something I could do with mashed strawberries.  I started by mashing up some strawberries and some frozen raspberries.  I wanted something to stir into it so I made a little lemon custard by blending this together:

  • 3/4 scoop vanilla protein powder
  • 1/4 cup milk
  • 1 T. lemon sf ff pudding powder

It was a very thick little mixture.  I plopped in on top and started by eating bites off the custard with the berries.  I ended up mixing it all in after a while though.  This would be really good with some sort of cheesecake-y like custard too!  Oh, maybe I’ll try that this week!  I’ll let you know how it goes!

Berries ‘n’ Cream Loaded Oatmeal

I’ve been thinking about this bowl of oatmeal for a few days now and I was really excited to try it!  Let me just say, it was so good I wanted to have another bowl right after the first!  I’ll cut to the chase and tell you what was in this bowl of yummy goodness.

I started with the loaded oatmeal base.

I mixed in:

  • 1/2 scoop vanilla protein powder
  • 1/4 box (I’m actually not really sure if it’s 1 T. so I’ll start saying 1/4 of a box) vanilla sf ff pudding mix

I topped the mix with:

  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 1/2 cup strawberries
  • 1 packet truvia

This is a ton of berries.  When you stir it all together it tastes like a big bowl of berries with creamy bites mixed in as opposed to actual oatmeal.  It is sooo good!  Let me say, though, if you use frozen berries make sure you thaw them so they don’t turn your oats cold.  This whole bowl has about 330 cals depending on your brands.

The kids started their first session of swimming lessons today.  They did so great!  Caleb is a really good swimmer so I knew he would do awesome.  Brynley on the other hand gets a little nervous about things so I was really nervous for her…  But she did really well.  She did everything they asked of her and was even asking to go off the diving board!  What?!  Where did that courage come from?!  They’re excited to go back tomorrow.

It’s cold here.  I mean really cold.  Like I wish I had a jacket at swimming lessons this morning.  We have only been to the pool once and it’s June 8th for crying out loud!  I’m more than ready for this weather to warm up!  But looking on the bright side, the cooler weather is keeping me inside getting ready for the garage sale next week and doing other things around the house that need getting done.

Strawberry Nut Cottage Cheese

Here’s another simple yet fabulously tasty snack for you all to try.  It’s very easy.  Stir these yummy things together in a bowl:

  • 1/2 cup cottage cheese
  • Sliced strawberries
  • Almonds
  • Cinnamon
  • Truvia or Splenda

Hey guys, how are things?  Today we’ve got my daughter’s dance recital!  I’m so excited about it.  It’s going to be so cute.  Yesterday was her dress rehearsal.  She was on a big stage with all the professional lighting and music and everything.  Afterwards she would not stop talking about it, “Mom, did you see me?!  That was so fun!  The music was so loud?  Could you hear it?  That was so fun!  Did you see me?”  It was really cute.

I’ve also got a consult for Lasik Surgery today!  I’m really excited to learn more about it.  I’m pretty sure I’m a good candidate as my eye dr has been telling me for years I should get it done.  That’s about it around here today.  I’ve got to flyer another neighborhood for my next boot camp.  For details on the next camp see the boot camp link at the top!

Strawberry Cheesecake Loaded Oatmeal

Oh, this has got to be a new favorite of mine.  It was SO GOOD!  Here’s the mix:

Loaded Oatmeal Base mixed with:

  • 1 T. lf cream cheese
  • 1 T. ff sf cheesecake pudding mix
  • 1/2 scoop vanilla protein powder
  • 1/4 cup cottage cheese

Topped with:

  • Strawberries
  • 1/2 graham cracker, crushed
  • 1 T. lf cream cheese (yes another one to take bites off of)

This really did have a cheesecake like flavor!  It was awesome!

Today is going great so far.  I got up at the crack of dawn to teach boot camp.  Today was the first morning that I awoke with a great big jump because I thought I had missed it.  I remember thinking to myself, “It is way to light out to be 5:40am!  I missed it!”  But no.  It is just getting closer to summer!  Workout was great.  We went to Caleb’s school this morning to see what class he is in next year and I think he got a good teacher so I’m excited about it.  There are a few kids from his class this year in his class next year so he’s excited too.

We had a great Memorial Day!  We went to the zoo with my brother and sister in law and their kids and mother in law.  It was crowded but it didn’t really feel like it.  We didn’t have to wait too long to see anything.  After the zoo we went to my sister in law’s for a great big bbq.  The food was awesome, the company was great and they had a bounce house for the kids!  Everyone was happy and that, in turn, makes me happy!

Strawberry Overnight Oats and Homemade Chocolate Coconut Protein Bars

This morning I almost didn’t get up.  If it wasn’t for the fact that I was running with Saundra I probobly would have stayed in bed!  I’m glad I got up though because we had a great run and some good girl bonding time.

After my run I had a bowl of Strawberry Overnight Oats.  It was really great!

The night before I put these things in the bowl:

  • 1/3 cup oats
  • 1/3 cup milk
  • 1/3 cup plain yogurt
  • 1 T. homemade sugar free strawberry syrup

This morning I topped it all off with:

  • 1/4 cup cottage cheese
  • 1 T. flax seed
  • Strawberries
  • 1 T. peanut butter
  • Stevia

It made a great big bowl and tasted really good to my hungry tummy!

After taking Caleb to school I wanted to try out this homemade protein bar recipe I got from a friend.

  • 4 scoops chocolate protein powder
  • 1/4 cup peanut butter
  • 2/3 cup flax seed
  • 1/2 cup water
  • Splenda/Granulated Stevia to taste

Mix all that together in a bowl.  It’s going to be hard to mix.  Just keep on stirring.

I then pressed it all into a bread pan and pressed some chocolate chips and coconut into the top.

That mixture is in the freezer and when it’s hardened I will get it out and cut it into 6 bars to individually wrap.

I plan on having one with a smoothie for lunch so I’ll tell you all how they are!

Featured Recipe: Chicken with Strawberry-Avocado Salsa

Today we are taking a little trip down memory lane.  I take you back to Monday when I made two yummy things but couldn’t post them because my camera ran out of batteries! 

That afternoon my creative juices were flowing and I blended up a little bit of heaven, otherwise known as Chocolate Coconut Almond Butter.

Wow, was it good.  I put in:

  • 1 cup almonds
  • 3 T. oil
  • 3 T. honey
  • 3 T. cocoa
  • 1/2 cup coconut
  • 1 T. coconut extract (this was too much; I’d half this next time)
  • 1/4 cup coconut milk

It was so good!

For dinner we had Rotiseree Chicken with Strawberry-Avocado Salsa and Roasted Sweet Potatoes.  It sounds very gourmet but it was very easy and super good!!!  Brandon bought the chicken at Wal Mart right before dinner and I shredded it up.  We topped it with the strawberry-mango salsa:

  • 1 cup finely chopped strawberries
  • 1 finely chopped avocado
  • 2 T. finely chopped red onion
  • 2 T. chopped fresh cilantro
  • 1/2 t. grated lime rind
  • 2 T. lime juice
  • 2 t. finely chopped seeded jalapeno
  • 1/4 t sugar

Mix all that in a bowl and toss gently.

For the sweet potatoes I just peeled them and diced them.  I tossed them in 1 T. olive oil and some Mrs. Dash and roasted them at 400 degrees for about 35 min stirring occasionally.  They were so good!  I don’t think I’ll ever do sweet potatoes any other way!  The roasting really brought out their sweet flavor.  I told the kids there were “candy potatoes”.  :)

Today I got up at 6am and went running again with Saundra.  It was good.  She’s faster than me so it made me pick up the pace a little.  This is day 3 of being up to workout before the kids!  I’m loving it!  I am so sore from the boot camp yesterday!  And if I’m this sore I feel bad for the girls in the class!  I hope they decide to come back… ;-)

 I decided to try making homemade bread this morning using my Blendtec to ground the wheat.  It was so awesome!  In 50 seconds I had whole wheat flour from wheat.  It was cool!  I’ve got the bread in the oven now.  I’ll tell you how it turns out!

Oatmeal and Yogurt Parfait

This was a really good variation of traditional oats.  I loved this and will definately have it again, maybe even tomorrow. :)

Let me talk about each layer:

  1. First layer is oatmeal.  Not loaded oats, just traditional oatmeal.  I did 1/4 cup oats with 1/2 cup water nuked for a minute and a half.  Then I stired in 1/2 scoop vanilla protein powder and 1 T. sf ff vanilla pudding mix. 
  2. Second layer is yogurt and cottage cheese.  I took half of a container of Weight Watchers raspberry yogurt and blended it with 1/4 cup cottage cheese until smooth.  Many blenders won’t blend this because there isn’t any liquid.  I use my magic bullet.  If your blended won’t mix this, you can either add a teensy bit of milk or just stir it together. 
  3. Third layer is sliced strawberries.  I sliced up about 7 strawberries.
  4. Last layer is 1/4 cup Fiber 1 cereal and 1 T. slivered almonds.

To assemble layer half the oats, half the yogurt/cottage cheese, half the berries and then half the cereal and almonds.  Then repeat the layers with the remaining ingredients.

In my world today:

I am so sore from my new workout program!  I’m loving it.  I got up and got the workout in.  I just did 45 min of lifting and I’m going for a run later tonight.  I ran some errands, did some cleaning, you know, the usual.  Nothing too crazy around here, but that’s how I like it.  I hope you’re all having a wonderful day!
