Chicken and Apple Wasa

Make a chicken salad with about 2-3 oz cooked chicken, shredded to 1 T. low fat mayo.  Top a Wasa cracker with 1 low fat laughing cow cheese wedge, apple slices and chicken salad.  What a tasty little snack!

Apple Cinnamon Eggs

This is one of my faves lately.  To make the eggs, start by dicing half an apple and “frying” it in a 1/8 t. coconut oil.  Meanwhile, whisk together 3 egg whites and 1 t. sugar free cider mix (in a single serving pixie like crystal light), cinnamon and stevia.  Add to the apples and scramble the egg mixture.

This is your egg base.  From here you can do one of two things.  Add those eggs to a sandwich thin (pictured above) with 1/2 T. natural maple syrup and grill on a panini press or George Foreman until toasty.  This is a GREAT sandwich!  Or, if you don’t want the carbs, simply top your eggs with a drizzled tablespoon of peanut butter.  Both ways are incredibly delicious!

Apples ‘n’ Cream

Today’s recipe is something I had yesterday with some greek yogurt.  I don’t always buy greek yogurt.  I love the thick, custard-like texture but it is three times the price of regular plain yogurt so I consider it a special treat.  For those of you who don’t know, greek yogurt is specially strained to remove the liquid from the yogurt.  This leaves you with a very thick, rich yogurt that is much higher in protein than regular yogurt.  The regular varieties are high in fat so watch for fat free or low fat varieties.  A lot of people love FAGE but they don’t sell that brand anywhere close to where I live.  I buy this Stoneyfield Farms variety.

I usually get plain but my Walmart was out of plain when I bought it.  It has a very tart taste that is too much for some people.  If you don’t like it, just add in some stevia or Splenda and it tastes much sweeter.  Look at that texture!

Today, I added some Truvia (stevia) and cinnamon.

Then I added some chopped up apples and topped with more cinnamon!  It was a fabulous mid morning snack!

Wow, guys, I ate a lot of food yesterday.  I was really munchy and I’m not sure why.  I’ve heard that if you eat a big breakfast it can help keep your appetite/munchiness in check the rest of the day so I’m going to try it out.  I’m going to really increase the size of my breakfasts (to close to 450 calories) and decrease my dinner size and see how it affects me.  I’ll keep you posted.  :-)

We have another bbq tonight!  While I love bbq’s this is the third one this week!  I need to control myself tonight with the different salads and treats because I have already splurged enough this week.  Here’s my plan.  I’m going to take a picture of my plate (my ONE plate) that I eat tonight and show it to you all tomorrow!  It will be my “One Plate Challenge”!  I’m skipping the burgers because I can have those anytime.  I am letting myself have 1-2 servings of dessert (or bite of a few) and some yummy salads.  That will be enough that I feel like I’ve indulged but not too much food that I get too full.  Are you all excited?!  Get ready for tomorrow to see the results of my “One Plate Challenge”!

On another note, do any of you other moms out there have a hard time with munching?  I feel like I’m always walking to the pantry, eating off my kids plates, grabbing a bite of this or that.  It’s really driving me crazy and I need to stop the mindless munching.  My goal for the rest of the week, yes, I know it’s already Wednesday, is to work on the mindless munching.  If I am hungry I will sit down and eat a balanced meal or snack. 

What do you guys do to battle the munchies?

Cinnamon Apple Overnight Oats

This morning was supposed to be my “sleep in” morning.  Turns out Aubrey was up in the night and Brynley woke up at 5:45am because she had to go potty.  I was able to go back to sleep but it wasn’t quite as nice as I was hoping for.  I got up at 7:15am and had a little pre workout snack of yogurt, fiber 1 cereal, a few walnuts and a little coconut.

I took the girls to the gym with me only to realize that I had forgotten Aubrey’s bottle and she was already getting hungry.  I knew if I came home and got the bottle…  I’d probobly just stay  home so I went anyway and told them I’d only be 20 minutes!  I busted out some 30/60 sprint intervals on the arc trainer for about 20 minutes and came home. 

After my workout I had Cinnamon Apple Overnight Oats.

These oats were so good!  Here’s how you make overnight oats:

The night before add equal amounts of oats, yogurt and milk to a bowl.  I did 1/3 cup of each today.  Stir to combine.  Refrigerate overnight.  In the morning add your toppings.  Today I did 1/4 an apple chopped up, cinnamon, stevia, 1/4 cup cottage cheese and 1 T. almond butter on the side.  They were so good! 

They didn’t keep me full super long though.  Probobly because I ate them right after my workout.  After I ate them I put in my garden which is hard work!  That could also be why I was hungry early. 

I add the soil conditioners to the dirt and tilled it with the claw (talk about a great workout right there!).  Then I planted tomatoes, peppers, cabbage, broccolli, cauliflower, zuchinni, summer squash, spaghetti squash, watermelon, canteloupe, cilantro, anaheim peppers and tomatillos.  Most of those things I’ve never done before so we’ll see how it all works!

I was starving for lunch after doing the garden for 2 hours.  I had a big egg salad made with 1 egg, 2 egg whites, 1 T lf mayo, mustard, celery, avocado, cucumber and red bell pepper.  The bell pepper in it was fantastic!!!  I had that with two small slices of homemade bread and the left over brocolli slaw salad with some Sesame Ginger dressing.

Looks like a good plate of food, huh?  Funny, because I was full on hungry about 30 min later.  I had about 2 T. almond butter and that hit the spot.  :)

I learned today that I like working out early.  My whole day feels out of whack.  I didn’t even put the breakfast dishes away until just a bit ago and the house is a Dis.aster.  A lot of it probobly has to do with the fact that I had to do the garden but still.  I feel very … scatterbrained and like I’m living in a pig sty.  I may start exercising early every day.  We’ll see.

Question of the day:  What time of day do you workout and do you like it?  Why or why not?
