Six Can Chili

I realize that this picture makes this chili look … not very appetizing.  But I promise it is way good and really easy! 

1 pounds lean ground beef
1/2 c. chopped onion
2 cans (15.5 oz each) chili beans in sauce, undrained
2 cans (14.5 oz each) diced tomatoes, undrained
1 15 oz can black beans, drained and rinsed
1 can (10.75 oz) condensed cream of mushroom soup
1 t. chili powder

Brown ground beef and then add chopped onion.  Meanwhile combine the beans, tomatoes, soup and chili powder and heat through.  Add the mean and onions and heat through.

A New You for a New Year – Week 4

This is the final installment of my “New You for a New Year” weekly workouts.  I hope you guys are enjoying them and working hard! 

Do these exercises 2-3 times a week, 2-3 sets of 10-12 reps.  To see video demo’s go to my You Tube channel and search by the name of the exercise.

Diamond Push ups (on knees if needed)
Plie Squat
Over/Unders - 1 min
2 Point Dumbbell Row
Romanian Deadlifts
Squat Jacks - 30 sec
Incline Curls
Bench Dips
Extended Plank 30-60 sec
Stability Ball Crunch 25 reps

For your cardio this week do this interval workout twice on a treadmill:

5 min warm up

1 min 2.5 incline, jog
1 min  5 incline, jog
1 min 7.5 incline, fast walk
1 min 10 incline, fast walk
1 min 12.5 incline, walk
1 min 15 incline, walk

Repeat for 3 times total.  Try really hard NOT to hold on to the treadmill!

Repeat for 15 min

5 min cool down

Vacation Update

Hi all! I am officially back from vacation! I say “officially” because I returned home to my house Sunday night. But of course it has taken 5 full days to readjust and get caught up on everything after being away! My husband and I and our friends went on an amazing Southern Caribbean cruise visiting St Thomas, Dominca, Barbados, St Lucia, St Kitts and St Martin. We ate, relaxed, hiked, ate, played in the ocean, read books in the shade, ate, swam through caves, swam in waterfalls and did I mention ate so much wonderful food? It was such a wonderful break from life. But now I am back and ready to go! You will be getting more recipe posts and my usual stuff next week. Body By Eats by Leigh Peele

A New You for a New Year – Week 3

I hope you guys are still around and working hard!  We are taking it up a notch this week by increasing our weights and adding in some cardio bursts to your weightlifting.  This is GREAT for fat loss!  Notice I have you doing lower reps this week.  Make sure you increase your weights so that it is still challenging!

Do these exercises 2-3 times a week, 2-3 sets of 10-12 reps.  To see video demo’s go to my You Tube channel and search by the name of the exercise.

Cable Chest Press
Walking Lunge
Jumping Jacks – 1 min
Cable Row
Stability Ball Leg Curl
High Knees – 1 min
Hammer Curls
Cable Tricep Extension
Plank 30-60 sec
Side Plank 30-60 sec

For your cardio this week do this interval workout twice:

5 min warm up

30 sec hard (sprinting as hard as you can; aim for 10mph or more; work up to that if you’re not there yet)
60 sec recovery (walking – 3.5 mph ish – if you can jog during your recovery you weren’t sprinting hard enough)

Repeat for 15 min

5 min cool down

Again, fill in the rest of your cardio with steady state cardio and you’re all set!  Good luck this week!

Chobani Yummies!

MMMMMMmmmmm I love me some Chobani yogurt!  This is seriously the best greek yogurt I have ever tasted.  Even their plain flavor didn’t need any sweetener.  And I have never had a plain greek yogurt that I didn’t have to add stevia to.  I am so so sad that Chobani isn’t carried anywhere in Utah.  I have heard that some Costco’s in the midwest have it…  So if you live somewhere in that general vacinity, go and find it!  You WON’T be dissapointed, I promise!  You can run on over here and see if it is carried near you.  Chobani has some great flavors and they are so smooth and taste like custard.  Pomegranate, honey, pineapple or strawberry, anyone?

If you are new to the greek yogurt scene and are wondering what the fuss is all about.  Visit Chobani’s website where they tell you all about greek yogurt and specifically Chobani greek yogurt.

Chocolate Chip Pumpkin Pancakes

These pancakes are so good and they are a very common Sunday breakfast at our house in the winter.

2 c. whole wheat flour
3 T. brown sugar
2 t. baking powder
1 t. baking soda
1 t. ground allspice
1 t. cinnamon
½ t. ground ginger
½ t. salt
1 ½ c. milk
1 c. pumpkin puree (canned pumpkin)
1 egg
2 T. vegetable oil
1 T. vinegar

  1. In separate bowl, mix together the milk, pumpkin, egg, oil and vinegar.  Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in another bowl.  Stir powder mixture into pumpkin mixture just enough to combine.                                            
  2. Heat a lightly greased griddle or frying pan over medium heat.  Pour desired amount of pancake batter onto griddle and brown both sides.  I always press about 7 chocolate chips into the pancake after I’ve poured it on the griddle.  Serve hot with natural syrup or some peanut butter.

These cook up SO full and fluffy!  Almost like a big cookie!  You’ll love them!

Bench Press
Stationary Lunge
Assisted Chin Up
Lying Leg Curl (see seated leg curl video)
Cable Curls
Skull Crushers
Supermans 30-60 sec
Plank 30-60 sec

For your cardio this week do this interval workout twice (preferrably on a treadmill):

5 min warm up

30 sec hard, incline 2.5
60 sec moderate, incline 2.5
60 sec recovery, flat incline

Repeat that interval at incline 5.0, 7.5, 10.o, 12.5 and 15, if your treadmill goes this high.  Then come back down to 2.5 incline.

Again, fill in the rest of your cardio with steady state cardio and you’re all set!  Good luck this week!

Oh my gosh you guys.  I tried THE best sugar free protein bar today.  It is made by Small World Beauty and the flavor is Coconut Coco Cream.  It tastes JUST like a Mounds bar.  Seriously.
